Mixed Green Salad With Red Fruits

If you have a Café Zupas near you, you may have tried their “Berries and Nuts Salad”. It’s my FAVORITE, but my mom has been making a very similar homemade version for as long as I can remember.

The salad starts with a bed of fresh vegetables. You can really use any type of lettuce you like. I like to mix different types or use a bag of mixed vegetables.

Load up the salad with fresh berries, some chopped onion, candied pecans, and a sprinkle of feta if desired.

I love the fresh berries combined with the crispness of the apple and the tangy-sweet dressing. Also, any salad that contains candied pecans is always a winner, right?

Candied pecans, also called caramelized pecans, are one of my favorite ingredients for a homemade salad. If you don’t like pecans, you can substitute other types of nuts or leave them out.

My candied walnuts recipe features a quick-on-the-fire version, great for use with salads, or an even more flavorful baked version.

The salad dressing is really simple and perfectly sweet and you can easily adjust it to suit your favorite flavor. Homemade salad dressings like this one will keep well in the fridge for about 2 weeks, so feel free to make the dressing ahead of time!

  • ▢ 10 cups mixed lettuce (red, romaine, spinach, or whatever)
  • ▢ 1/2 cup fresh strawberries, sliced
  • ▢ 1/2 cup fresh blueberries
  • ▢ 1/2 cup fresh raspberries
  • ▢ 1/4 cup red onion, chopped
  • ▢ 1 sweet apple, chopped
  • ▢ 1 cup candied pecans
  • ▢ 1/3 cup crumbled feta cheese

Creamy Poppy Seed Dressing:

  • ▢ 5.3 oz container of strawberry yogurt
  • ▢ 1/3 cup mayonnaise
  • ▢ 1 piece of purple onion
  • ▢ 2 Tablespoons of milk
  • ▢ 2 tablespoons granulated sugar
  • ▢ 3 tablespoons apple cider vinegar
  • ▢ 1 tablespoon of poppy seeds
  • Add all seasoning ingredients to a blender and blend until smooth.
  • Taste. Add more vinegar if you like it spicier, more sugar if you like it sweeter, or a little more mayonnaise and a splash of milk if you like it creamier.
  • Combine the poppy seeds. Store the dressing in the refrigerator for up to 2 weeks.
  • Prepare the candied walnuts.
  • Prepare, wash and dry the berries and chop the apple and onion. Add the vegetables to a large bowl. Add toppings (I like to reserve a tablespoon of each topping to add last, for aesthetics).
  • Blend the mixture into the desired amount of seasoning. Serve immediately.
