One of the many wonderful things about Keto is that you can still enjoy your favorite foods. All you have to do is make a few substitutions! In this case, the avocados take the place of the tacos by removing the unhealthy carbs in the tacos and adding healthy fats.

When they start Keto, some people think that they will have to miss out on Mexican food. Fortunately, this is not the case! Sure, rice and beans may be too carb-heavy for those who want to follow a low-carb diet, but when you make your own homemade taco meat, you can go Keto just about any Mexican meat dish.

With Keto, your focus is on consuming plenty of healthy fats. And this is where avocados really come into play. They’re loaded with healthy fats, and let’s face it, they’re SO delicious.

I try to incorporate avocados into as many meals as possible. I have to say that homemade guacamole is one of my all-time favorite salsas and is a perfect way to consume any avocado you have laying around.

How to Make Taco Stuffed Avocados

Make a batch of my Easy Taco Meat and prepare the rest of the ingredients while the meat cooks.

Cut each avocado in half and remove part of the pulp. You can save it to use in guacamole or just drizzle some olive oil and a sprinkle of all over bagel dressing on top.

Take each avocado half and fill it with the taco meat. Top with the tomatoes, cheddar cheese, shredded lettuce, and an optional dollop of sour cream.

Serve immediately and store leftovers in the refrigerator in an airtight container for a few days. To prevent the avocado from turning a bit brown, you can sprinkle a little lime juice around the exposed edges.

What are the net carbs in avocados?

Most of the carbohydrates in avocado come from fiber. Once the grams of fiber are subtracted, which gives the net carbs, the medium-sized whole avocado has only 2.6 grams.

Tips for Buying and Storing Avocados

Choosing the perfect avocado can be difficult. Storing it to maximize its freshness is an even bigger challenge. I hope these tips help you:

  • You want the avocado to have an even texture throughout. Soft or mushy spots are bruises on the fruit and will most likely have dark spots on the inside.
  • Firmness says it all. If an avocado is too firm to the touch, it is not ripe. If you need them several days in advance, they can be a good choice as they ripen nicely sitting on the counter. If they are super soft, they are overripe or will need to be used right away. Just apply light pressure to the fruits, don’t over-tighten them.
  • Contrary to popular belief, if you have an avocado that isn’t ripe, don’t store it in the refrigerator. Refrigerating avocados interrupts the ripening process. Put it in a paper bag on the windowsill and it will help it ripen faster.
  • To optimize its freshness in the refrigerator, sprinkle with fresh lemon juice and place in a food-safe bag, with all the air sucked out. They are usually best when used within 3 days of cutting.
  • You can also freeze avocados. To do this, blend the avocados with a little lemon juice in a food processor, put them in an airtight container in the freezer for up to a few months. Just know that the texture will change slightly once they have frozen.
