This recipe for zucchini with chicken and pesto serves 2 people.
1 lime spray
2 chopped chicken fillets
1-2 garlic cloves finely minced
1 small red onion, minced
salt and black pepper
½ yellow pepper in small pieces
10-12 mushrooms, sliced
12 cherry tomatoes, cut in half
250 grams of spiral or velvety courgettes (available in supermarkets)
1 heaping tablespoon pesto
Heat a large skillet and add 1 Cal Spray. Then add the chicken pieces, garlic, and red onion. Fry for 10 minutes.
Add the pepper and mushrooms, fry for another 5 minutes until the chicken is lightly browned and the onions and peppers start to soften.
Sprinkle over the cherry tomatoes and brown for another 5 minutes, then add the pesto and mix.
Then add the zucchini and mix for another 3 minutes.
