Air Fryer Potato Skins are a quick and easy appetizer or side dish that everyone will love! Leftover Baked Potatoes become crisp-tender potato skins stuffed with cheese, crumbled bacon, sour cream, and green onions.
This homemade potato skin recipe is the perfect start to game day. They taste just like TGI Fridays, but they’re better because they’re easy enough to cook in your air fryer. Some of my favorite appetizers are the jalapeno poppers, these little smoked poppers, and the easy fry egg rolls.

Ingredients for the potato skins
Red potatoes are known to be thicker and hold together better for these potato skins. They are stronger potatoes to cut and hollow. Fill the potato with all the products and air fry to perfection! See the recipe card at the bottom of the post for exact measurements.
- Potatoes: Red potatoes are the best because they are the perfect size.
- Olive oil: This covers the skin of the potatoes and creates a crispy texture on the outside.
- Salt and pepper: Add salt and pepper to taste!
- Cheese: Sprinkle over baked potato. Colby Jack is my favorite cheese, but feel free to use cheddar.
- Bacon: Cook and crumble over pieces.
- Green onions: Chop up and add a bit on top to add flavor.
- Sour cream: Ideal for dipping or putting a spoonful on the skin of potatoes. Ranch dressing is delicious too!
Preparing the Potato Skins for the Air Fryer
This appetizer or side dish is one of the best and easiest recipes to prepare a quick dish to serve. Carefully cut and hollow out each potato skin. This recipe is also great for doubling. You just have to cook them in batches.
- Prepare the Potatoes: Cut the potatoes in half lengthwise. Use a teaspoon to carefully scoop out the pulp inside, leaving a 1/4-inch “edge.”
- Brush with oil: Brush the potatoes with olive oil, then season with salt.
- Put in the fryer: Place potatoes in air fryer basket cut side up.
- Cooked: Cook in air fryer at 375° Fahrenheit for 6 minutes or until golden brown and soft.
- Add the cheese and continue cooking: Open basket and sprinkle cheese evenly inside each potato skin. Continue cooking for another six minutes, or until the cheese has melted.
- Decorate the potato skins: Remove skin from basket and fill with sour cream, bacon, and sliced green onions.
- To a good time: Serve hot as the perfect side dish, appetizer, or game day meal!
Tips for perfect potato skins
Here are some quick and easy ways to make crispy potato skins using the air fryer. These will turn out to be the best appetizer or side dish you make! My kids always ask me to buy them and I don’t mind because they are my favorite too!
- potato sizes: It’s best to choose large, russet potatoes if possible. These will be the strongest and will keep the best when cooked.
- Freddy: Let the potatoes cool completely before cutting them. They fall off if cut too soon.
- Cut: Cut lengthwise over the potato skin. Scoop out the inside of the potato carefully. Leave about ¼ inch from the potato to help stability.

Keep the remaining potato skins
If you have any leftover potato skins from the air fryer, be sure to store them properly so you can enjoy them later! Since it’s important to properly store leftovers, I’ve come up with a few tips on how to do it!
- In the fridge: After they have cooled, store them in an airtight container and put them in the refrigerator. They will last you up to 4 days! Just be sure not to add the sour cream, bacon, and green onions until just before serving.
- To reheat: To reheat them, add the potato skins back to the air fryer and cook at 350 degrees for 3-4 minutes. Add toppings to taste!
