These green beans with almonds, also known as bean almandine or bean almandine (depending on where you live, the word “almond” is spelled a little differently) are a super easy and tasty side dish. This helps stop the cooking process so the beans remain slightly crisp but tender and don’t continue to cook. It also keeps them a bright green color.

How do I store leftovers?

You can store your almond beans in the refrigerator in an airtight container for up to 2 days. Heat in the microwave until hot. I do not recommend freezing.

HOW TO MAKE ALMOND BEANS:

Heat a large skillet over medium-low heat and add the sliced ​​almonds. Toast the almonds for 2-3 minutes or until they start to brown. Do not go! When the almonds are toasted, pour them into a small bowl and set aside. Set the pan aside as you will be using it again shortly.

Bring a large pot of salted water to a boil. Add the green beans and cook for 5 minutes.

After 5 minutes, drain the beans and blanch them in a bowl of cold (not ice) water. Drain them again and set them aside in a bowl.

Return the skillet to the stove and melt the butter over medium-high heat.

Add the beans to the pan and cook for 3-4 minutes. Add lemon juice and sliced ​​almonds (reserving a bit for garnish). Cook for another minute or until beans are tender. Don’t overcook.

Remove skillet from heat. Serve the beans hot and garnish with salt, pepper, and other sliced ​​almonds.
