Artichoke French Style » Simple and Healthy Recipe! ✅

I’m not sure if the French artichoke is an appetizer or a main dish! I just ate 2 as a snack while making dinner. Give this recipe a try and you can substitute the flours to make it a paleo or gluten free recipe. —Cindy Anschutz

  • 2 large eggs

  • 1 cup all-purpose flour (gluten-free flour or 1/4 cup coconut flour and 1/2 cup almond flour)

  • 1 teaspoon dried parsley or 1 tablespoon chopped fresh parsley

  • 1 teaspoon paprika

  • 1 can artichoke hearts, quartered, drained

  • 2 tablespoons unsalted butter

  • 2 tablespoons olive oil

  • 3/4 cup low-sodium chicken broth

  • 1/4 glass of white wine

  • 1/4 teaspoon freshly ground pepper

  • 1 tablespoon capers, drained

  • 1 lemon, squeezed

  • 1 lemon, cut into quarters to decorate

  • fresh parsley to decorate

  1. In a deep plate or bowl, beat the eggs. In another deep plate or container, mix the flour, paprika and parsley.

  2. Pass the artichoke quarters one by one through the flour, the egg, again the flour and the egg.

  3. Heat the butter and oil in a large skillet over medium-high heat. Add the covered artichoke hearts and cook until golden brown on all sides. Remove from pan and reserve. Clean the oil from the pan.

  4. In the same pan over medium heat add the chicken broth, wine, pepper and lemon juice. Once it starts to boil, bring to a simmer; add capers and artichokes. Let it simmer for 3 minutes.

  5. Arrange in a bowl and decorate with fresh lemon quarters and fresh parsley.
