How to cook baked cod

Preheat oven to 400°F.

Pat the cod pieces dry with absorbent paper, then place them in a grid-lined pan sprayed with nonstick spray.

Brush the top and sides of the cod with 1 tablespoon of olive oil. Sprinkle with half the salt, pepper, and oregano.

Advice: Lining the pan with aluminum foil makes cleanup a lot easier.

Bake for 10-12 minutes or until core temperature reaches at least 145°F when checked with a thermometer.

While the cod is cooking, add the tomatoes, yellow bell pepper, cucumber, red onion, and Kalamata olives to a mixing bowl.

In a separate bowl, put the olive oil, remaining salt, pepper, oregano, lemon juice, and grated zest in a bowl. Beat until well blended.

Pour the mixture over the chopped vegetables.

Stir until you get a well integrated mixture and let stand at room temperature until serving time.

Once the cod is cooked, serve with a little sauce on each piece and decorate with the feta cheese.

Advice: If you have any sauce left over, it’s also great on grilled chicken.
