Our children have been back at school for about four weeks. So far, they are still doing well enough to get up on their own and be ready to go on time. I must admit that I love the fact that our children are old enough to be responsible for preparing.

Do not misunderstand; I have days when I miss those little kids who needed me for everything. Our oldest going to college really made me wish those little ones were still here.

I still have moments of sadness, but for the most part I’m fine with our kids being older because now it means an extra hour of sleep for me on school morning. Eating breakfast the day before is another way I allow myself to sleep while the kids get ready.

Anytime we have extra brown bananas, I like to make a batch of these Double Chocolate Banana Muffins. Banana treats are always better the next day, so I never feel bad about not making them fresh for breakfast.

A casserole of baked oatmeal is another easy breakfast that I like to make the day before. If you put a square in the microwave, it tastes like freshly baked. I have to love it!

This Baked Chocolate Chip Banana Streusel is one of my daughter’s favorites. Can you tell we like chocolate and banana in this house? This time I decided to change the oatmeal a little.

We had a few extra apples in our fridge that needed to be consumed before the drawer claimed them as victims. I don’t know about you, but this time of year I start to crave everything apple and pumpkin, so I tend to buy more produce and cans when I’m at the store.

I should probably start planning my recipes a little better because we’re trying not to waste food.

My husband actually ate some of this baked oatmeal this time. He wanted me to tell you that if you eat it cold, it holds up like a mushy granola bar. Now you know.

Here are some simple tips for having a tray of this Apple Cinnamon Baked Oatmeal in your fridge while you wait for those hungry kids (or my husband) tomorrow morning.

  • Whisk the wet ingredients together first.
  • Mix oats, cinnamon, and apples, then add wet ingredients. Don’t over mix.
  • Pour the mixture into a greased mold.
  • Generously sprinkle the top with a little cinnamon sugar.
  • Cook until firm and toasty.
  • Cut into squares and put them in a bowl. Pour over milk and drizzle with honey!
  • Or eat it cold as a soft granola bar. In any case it works. To a good time!
