Baked Salmon with Parmesan and Herbs

I love salmon. It is my favorite fish to cook at home, not only because it is healthy and rich in omega-3, but I also love its flavor and versatility. if you want a Easy and healthy baked salmon that you can season ahead and bake, this Parmesan Herb Salmon is for you! I make and eat salmon once or twice a week, and while I have a lot of chicken dishes, I have so many salmon recipes in my rotation, like Salmon Rice Bowls, Baked Salmon, and Sweet and Spicy Glazed Salmon.

I have a lot of herbs in my garden so I chopped them up and chopped them up with some mayonnaise (trust me!) and Parmesan cheese and cooked up this beautiful piece of salmon. Mayonnaise is the secret to the moistest salmon ever, as I do in this salmon parmesan recipe. If you have never tried it, it is a must!

What herbs go well with salmon?

Most herbs go well with salmon. For this herb crusted salmon recipe, I used fresh dill, parsley, basil, and chives. Thyme, rosemary, and tarragon are also good. To make the garnish, combine the aromatic herbs with the minced garlic, grated Parmesan cheese and light mayonnaise.

How to cook salmon with parmesan herbs

  1. Place salmon skin-side down on a lined baking sheet and cover with another piece of parchment paper or aluminum foil.
  2. Partially cook the salmon for 8 minutes at 200° then remove from the oven.
  3. Cover the fish with the Parmesan and herb mixture and return the uncovered pan to the oven for about 15-18 minutes depending on the thickness of the fish. Salmon is done when its core temperature is 135°F, the top is browned, and the fillet flakes easily with a fork.

How long does salmon last in the fridge?

Cooked salmon will last three to four days in the refrigerator and can be reheated in the microwave or eaten cold. It would be great on top of a salad as leftovers.

  • 1 whole wild salmon fillet with skin, 1 1/2 inches (2 pounds) thick
  • 1/4 cup light mayonnaise
  • 1/4 cup grated Parmesan
  • 3 garlic cloves, finely minced
  • 2 tablespoons chopped dill
  • 2 tablespoons chopped parsley
  • 2 tablespoons chopped basil
  • 2 tablespoons chopped chives
  • Preheat oven to 425F. Line a rimmed baking sheet with parchment paper or foil for easy cleanup.

  • Combine mayonnaise, Parmesan cheese, garlic, and herbs in a small bowl.

  • Place salmon, skin side down, on a lined baking sheet. Cover the salmon with another piece of parchment or aluminum foil. Partially cook salmon for 8 minutes.

  • Remove from oven and remove top of parchment paper.

  • Spread top with Parmesan herb mixture.

  • Return to oven uncovered and bake until top is golden brown and salmon flakes easily with a fork.

  • Salmon should register 135º F when checked with an internal thermometer probe, about 15 to 18 minutes if fish is 1 1/2 inches thick, less or more depending on thickness.
