There’s nothing like a delicious, fluffy stack of pancakes on weekend mornings! Bananas not only add flavor, they also add moisture and natural sweetness. They are sure to be a hit with the whole family!
These are totally grain-free, gluten-free, and dairy-free (dairy-free), but they’re just as good as any traditional pancake. They are soft, tender with a delicious sweet nutty flavor.
Since they’re not overly sweet, they’re perfect for add-ins like kids’ chocolate chips, and it’s a perfect vehicle for some hot maple syrup.

CAN I MAKE THEM WITHOUT EGGS?

CAN I USE OLD BANANAS FOR PANCAKES?

How to make them mature faster? Place the fruits in a brown paper bag and fold the top loosely. along with an apple. Ethylene will accumulate and enhance ripening in approximately 24 hours.
WHY DO MINE FALL OFF BY HAND?
These are delicate as there is no gluten. The eggs play a crucial role in bringing the ingredients together. Make sure you don’t skip them and use large eggs. Also, make sure to turn them over very carefully to avoid breaking them.
It only takes a few simple basic ingredients to make this breakfast recipe. Here’s an overview of what you’ll need, look for exact measurements in the recipe card below.
- Almond flour: They are essentially ground almonds, be sure to specifically use super fine varieties.
- Banana: Use very ripe fruit for natural sweetness and more flavor.

IDEAS FOR CONDITIONS

- Peanut butter or almond butter.
- Sliced bananas.

HOW TO DO?
This is a simple and easy recipe that doesn’t involve beaten eggs. So all you need is a bowl and a whisk.
- Blend the dry ingredients – In a bowl, add the almond flour, baking powder, brown sugar, ground cinnamon, and salt and whisk to combine.
- Whisk together the wet ingredients – Mash 2 bananas until the mixture is smooth and add them to the eggs, until the mixture is homogeneous.

How to keep them warm?
To keep them warm, place them on a rack set over a baking sheet in the oven at 200 degrees, until ready to serve.
HOW TO SERVE
These are hearty and make a delicious breakfast freshly topped with maple syrup or drizzled with whipped cream.
They’re also great for brunch or a special breakfast. Combine them with healthy smoothies, tortillas, baked oatmeal, muffins or waffles.
HOW TO STORE?
Refrigerate cooled pancakes in a sealed container for up to 3 days.
- Microwave – Place on a microwave-safe plate and cook on 50% power for 30 seconds to 1 minute.
- fryer – Place in a preheated 320 degree air fryer and cook for about 1-2 minutes (turning halfway through once). This is a great way to crisp them up along the edges.
- Oven – We like to use the oven when heating a larger number. Arrange in a single layer on a baking sheet and heat until hot in a preheated 350 degree oven.
HOW TO FREEZE?
Arrange them on a baking sheet in a single layer and place in the freezer for 30 minutes, then place in ziplock bags and freeze for up to 2 months. Once ready to heat, simply microwave for 30-60 seconds or until hot.

Can I use plain flour?
Unfortunately not! This recipe is created solely to work with almond flour. So I wouldn’t recommend using regular flour or any other flour.
Am I gluten free?
Yes! They are naturally gluten free, as they are made with ground almonds.
Can I omit the sugar?
Since they are mostly sweetened with banana, you can omit the sugar in the recipe if you like.

- Beat all dry ingredients in a medium bowl.
- Add the eggs and mashed banana to a larger bowl and beat until very smooth. Combine the dry ingredients.
- Coat a nonstick skillet with melted coconut oil/butter/spray oil and place over medium heat.
- When hot, reduce to medium-low. Pour 1/4 cup batter into hot skillet. Cook for about 3 minutes (or until the bottom is a nice golden brown). Flip the pancakes over and continue cooking for another 2 minutes.
- Repeat the process until all the dough is used. Serve hot with maple syrup and toppings of your choice.
(These pancakes tend to brown faster than regular pancakes. So make sure the heat is always on medium-low.)
