  • Add a teaspoon of vanilla extract or almond extract to the finished filling to give it a different flavor profile.
  • Lemon zest can also be added to the pie filling to give it a stronger lemon flavor.

  • Use clear gelatin instead of cornstarch if you are filling the filling.

Recipe FAQs

How does the berry pie filling thicken?

Cornstarch is one of the most common ways to thicken a pie filling. You can also use clear gelatin, flour, or tapioca. DO NOT use cornstarch if you plan on filling homemade cakes.

Can you use frozen blackberries?

If fresh berries are not available, you can use bags of frozen berries. Be sure to thaw the berries completely, then drain off any excess liquid before making the filling.

You may need to add a little more cornstarch to thicken the pie filling when using thawed frozen berries.

What if I don’t like the seeds in my pie filling?

Crush the berries after they’ve popped and released their juices. Pass the cooked strawberries through a fine mesh strainer.

Use the back of the spoon to press the mixture firmly against the strainer. Remove excess pulp and berries and repeat until all fruit has been squeezed.

Return juice mixture to skillet and add cornstarch mixture. Cook until thickened. FOR YOUR INFORMATION: Removing the seeds and pulp from the fruit will result LESS padding.
