Dinner parties for me nowadays are all about fast and affordable cooking. Sometimes I don’t even want to braise my chicken. The inspiration behind this fanciful recipe comes from the convenience of fully cooked rotisserie chicken and the abundance of pre-shredded chicken I see in grocery stores today. It’s an easy pot of protein for quick dinners like this toast recipe. I take my love of Buffalo Chicken Gravy and turn it into a dinner. Top these babies with all of your favorite toast toppings; avocado, green onion, tomato, lettuce, and maybe even some spicy jalapeños for the brave. Simple dinner! Use pinto or black beans for a vegetarian version. For the spicy version, add the extra buffalo sauce topped with some sliced ​​serrano peppers. SPICY!

My friend Steph and I love this Sweet Greens Buffalo Chicken Salad. It is spicy, crispy and creamy. The tangy buffalo sauce and crispy toast topped with a creamy chicken filling. I wanted to bring those flavors to this crispy version of a buffalo chicken salad. Other dressings imagined include a creamy mashed avocado or sour pickled carrots, topped with a seasoned cabbage and romaine salad, then drizzled with additional buffalo sour cream sauce because it makes it extra spicy. For the buffalo chicken:
  • 2 cups cooked or grilled chicken breast, reheated and chopped
  • 1/2 cup buffalo sauce
  • 4 oz. cream cheese
  • 1 cup white cheddar cheese, shredded
  • 6 toast shells
For the toppings:
  • 1 cup romaine lettuce, thinly sliced
  • 1/2 cup tomatoes, diced
  • 1 ripe avocado, sliced
  • 1/2 cup sour cream
  • 1/3 cup buffalo sauce
  • 1/4 cup green onion, thinly sliced
  • 2 tablespoons fresh coriander sprigs
  • Kosher salt and freshly ground black pepper, to taste
  1. Preheat oven to 400 F.
  2. Arrange 6 pieces of toast on a baking sheet and sprinkle cheese evenly over each. Bake until cheese is foamy and golden. About 10 minutes.
  3. Combine chicken, buffalo sauce and cream cheese until incorporated and taste for seasoning. Divide chicken mixture evenly among toasts.
  4. Top with lettuce, tomato, avocado, and green onion. Drizzle with buffalo sour cream and garnish with cilantro sprigs.
  5. To a good time!
