Caramelized Shallot Beef Muffin » Simple and Healthy Recipe! ✅

I decided to make these delicious Caramelized Chive Meatloaf Muffins in individual servings. That way I can freeze leftovers and take out one at a time to enjoy later. You can also form this meatloaf on a baking sheet or use a cookie sheet. As a larger meatloaf, I would cook it for 45-55 minutes. Note: I served it with buttered cauliflower puree, chicken broth and sliced ​​shallot. I also made some sauce in a pan. —Cindy Anschutz

  • 7 medium shallots, thinly sliced

  • 1 pound ground beef

  • 1/2 pound ground pork

  • 1 large egg

  • 2 garlic cloves, minced

  • 1/2 cup gluten-free olein breadcrumbs, your favorite breadcrumbs, or almond flour

  • 2 teaspoons of parsley

  • 1 teaspoon sea salt

  • 3/4 teaspoon freshly ground pepper

  • olive oil or cooking spray

  • 2 teaspoons of unsalted butter

  1. Preheat oven to 350 degrees F.

  2. Take a large skillet over medium heat and add the butter and 1 tablespoon of olive oil. When the butter begins to boil, add the shallot. Cook until fully caramelized. About 25 minutes. Stir often using straps.

  3. Take about 1/4 cup of shallot and let it cool. Allow to rest in the pan removed from the heat.

  4. On a board, cut the shallot into cubes.

  5. In a large bowl add the beef, pork, egg, garlic, breadcrumbs/almond flour, parsley, salt, pepper and minced shallot. Mix well with a fork and then, if you want, with your hands. (For me, hands are the best kitchen tools.)

  6. Take muffin tins and brush with olive oil or spray.

  7. Divide mixture between 6 large muffin tins or 12 medium tins. Garnish each with caramelized shallots.

  8. Place the muffin tin on a large baking sheet. (This just keeps the grease from making a mess in the oven. Lightly cover the muffin tin (just put foil on top but don’t seal, I did it so the shallot doesn’t burn) and bake for 20 minutes, remove foil and cook for another 15 minutes.

  9. Remove from oven and let rest for 5 minutes, then enjoy your meal!
