These Carrot Cake Rice Krispie Squares are made with real carrots and baked spices, so they taste just like the real thing. We even garnished them with an easy-to-scrape cream cheese frosting!

For the Carrot Cake Rice Krispie Treats:

  • 4 tablespoons of salted butter
  • 1 mini bag of marshmallows
  • 1 ½ teaspoon cinnamon
  • ½ teaspoon of nutmeg
  • 6 cups Rice Krispies cereal
  • ¼ cup grated carrots

For the cream cheese bitumen:

  • 2 ounces cream cheese – softened
  • 1 tablespoon butter – softened, but not melted
  • 1 cup powdered sugar
  • ¼ teaspoon vanilla
  • 1/3 cup white chocolate chips

To make Carrot Cake Rice Krispie Treats

Line a 9×13-inch baking sheet with parchment paper.

Combine the butter and marshmallows in a large saucepan over medium-low heat. Mix until dissolved and smooth.

Remove from heat and add the cinnamon, nutmeg, grated carrots, and rice cereals.

Pour mixture into prepared pan and press gently to evenly fill pan.

Let cool until completely solidified before cutting.

To make cream cheese frosting

Beat softened butter and cream cheese with electric mixer. Beat vanilla and powdered sugar until fully incorporated.

Melt the white chocolate chips in a microwave-safe bowl. Heat in 20-30 second increments, stirring, until melted and smooth.

Pour the melted white chocolate into the cream cheese mixture and beat until smooth.

Scoop the icing into a piping bag and sprinkle it over the full candy pan or over individual pieces if you’ve already cut them.

Do Rice Krispie Treats need to be refrigerated?

Normally, no, rice krispie treats do not need refrigeration. However, cream cheese frosting should be stored in the refrigerator as it is made from dairy.

If you already covered the rice krispies, place them in an airtight container in the refrigerator.
