Cauliflower, green bean and tomato omelette » Simple and Healthy Recipe! ✅

ingredients
  • 2 tablespoons olive oil

  • 2 cups leftover cauliflower and green beans (recipe here: http://heatherpierceinc.com/recipes/couliflower-green-beans

  • 6 organic eggs

  • sea ​​salt

  • freshly ground black pepper

  • 1-2 tablespoons fresh herbs, such as parsley or basil (optional)

Indications
  1. Preheat the grill (in your oven, just press the “Roast” function and turn it on!).

  2. In a medium skillet, heat the olive oil over medium heat.

  3. Add leftovers and heat.

  4. Meanwhile, beat 6 eggs, a pinch of salt and pepper, and fresh herbs (optional) with a fork until smooth.

  5. Pour the eggs over the leftovers in the skillet. Shake the pan and let the eggs fall into the corners and crevices of the vegetables. Using a spatula, gently beat in the eggs and shake the pan until the bottom begins to set.

  6. To check if the bottom is set properly, you should be able to get the egg mixture off the sides of the pan in one piece without it sticking.

  7. Transfer tortilla to oven to cook under broiler until top is nicely browned; you should see it boil like in the video.

  8. Remove from oven, let cool and cut like a pie.
