Ingredients for Broccoli Bites

Broccoli – Fresh or frozen broccoli works, make sure it’s cooked so it’s crisp-tender and well-drained. Finely chop the broccoli so that it mixes well with the other ingredients.

Rice – Any type of cooked rice will work in this recipe! White or brown rice, cauliflower rice or any other leftover rice, barley, or even small macaroni can be added to the mix!

Broccoli Cheese Rice Nuggets are as easy as 1, 2, 3!

  1. Boil broccoli until crisp-tender. Cool completely and cut into small pieces.
  2. Combine with the other ingredients in a large bowl.
  3. Load prepared muffin tins evenly with broccoli and rice mixture and cook (for recipe below) until crispy on the surface.

  • Make sure all the pieces are cut into small pieces so the morsels stay together as they cook.
  • Butter the muffin tins. very well or use silicone or parchment liners as the rice can really make them stick!
  • For best results, avoid overcooking broccoli bites. Once they are removed from the oven, they will continue to cook for a bit (this is called carryover cooking).
  • If you have greased the baking sheet instead of using the baking cups, run a butter knife around the edges of the cups while they are still hot and let cool before removing from packaging.
  • Store leftover broccoli cheese nuggets in a covered container in the refrigerator for up to 4 days. Enjoy them as is or reheat them.
  • Wrap individual broccoli bites in plastic wrap and freeze in a resealable bag for up to 4 weeks. Let them thaw in the refrigerator before serving.

In this recipe, egg bites meet cheesy broccoli casserole in a handmade broccoli rice bite.

Preparation time 15 minutes

Cooking time 30 minutes

Total time 45 minutes

  • Preheat oven to 375°F.

  • Bring a medium pot of water to a boil. Add the broccoli and cook until crisp-tender, about 3-4 minutes. Drain very well and cut into small pieces. Cool completely.

  • Combine all ingredients in a bowl.

  • Thoroughly grease a muffin pan or line with baking pans (*see note). Gently divide rice mixture into 8 muffin tins.

  • Bake for 20-25 minutes or until set and golden on the surface.

  • Gently run a knife around the edges of each broccoli rice cup to loosen them. Let it cool in the pan for at least 5 minutes before removing it from the pan.

  • Option: If you have extra cheese, cut it into ½-inch cubes and press into the center of each bite.
