This Cashew Chicken Broccoli recipe is here for you on busy weekday nights when you need to have a healthy and delicious meal on the table in no time! It’s made with sautéed chicken and broccoli, topped with lots of roasted cashews, fresh garlic, ginger, and scallions. Everything is then mixed with a perfectly balanced savory sauce sweetened with a touch of honey. Serve it over rice, noodles, quinoa or whatever sounds best, add a drizzle of sriracha if you want a little heat and dinner can be on the table and ready to enjoy in 30!

With that being said, as much as I love this recipe served sizzling in the pan, I have to say that leftovers are absolutely fantastic too. And while I’m all for the broccoli chicken and cashew nut combo, this recipe is infinitely flexible if you want to swap in whatever protein, vegetable, or nut you like best. So feel free to customize it and make it your own.

Before we get to the full cashew chicken recipe below, here are a few notes on the ingredients you’ll need:

  • Chicken: You will need boneless, skinless breasts or thighs, which we will cut into small pieces, season with sea salt and white pepper, and sauté in peanut oil (or oil of your choice).
  • Broccoli: Feel free to save a step here and purchase a 12-ounce bag of pre-cut broccoli florets. Or, of course, you can buy a stem and cut it yourself.
  • Cashews: You will only need basic (uncooked) roasted cashews for this stir fry.
  • shallot: Chop and add the white parts to the sauce and then sprinkle the green parts as a garnish.
  • Fresh garlic and ginger: Feel free to chop or grate the fresh garlic and ginger.
  • Sauté Sauce: It is made by whisking together chicken broth (or vegetable broth), oyster sauce, low-sodium soy sauce, dark soy sauce, honey, white pepper, and cornstarch.
  • Roasted sesame seeds: We’ll add them as a garnish for a little more crunch and sesame flavor.

Here are some other variations of this cashew chicken recipe that you can try:

  • Use a different protein: Sauté a different protein (such as beef, pork, shrimp, or tofu) instead of chicken.
  • Use different vegetables: Instead of (or combined with) broccoli, such as asparagus, bean sprouts, Chinese cabbage, carrots, green beans, onions, snow or peas, zucchini, etc.
  • Use different nuts: Use walnuts or almonds or another favorite kind of nuts (or seeds) instead of cashews.
  • Make it spicy: Add your favorite hot sauce (like Sriracha), fresh chili peppers, or a pinch of chopped chili.
  • Prepare it without gluten: Use oyster sauce, soy sauce, and certified gluten-free dark soy sauce.

Ingredients for the stir fry:

Sauce Ingredients:


  1. Make the sauce. Whisk all sauce ingredients in small bowl (or mix in mason jar) until well blended. Set aside.
  2. Fry the chicken. Season the chicken with salt and a pinch of white pepper. Heat 1 tablespoon of oil in a large skillet or wok over high heat. Add chicken and sauté, stirring occasionally, for 3-5 minutes or until cooked through. Transfer to a clean plate and reserve.
  3. Fry the vegetables. Add the remaining tablespoon of oil to the skillet. Add the broccoli florets and the white parts of the shallots and sauté for 2 minutes, stirring occasionally. Add cashews, garlic, ginger and sauté for 1-2 minutes, until broccoli reaches desired level of tenderness.
  4. Combine. Add sauce and cooked chicken to skillet and sauté 1 minute, or until sauce thickens and evenly coats chicken and vegetables.
  5. Serve. Serve immediately over rice or noodles, garnished with toasted sesame seeds and the green parts of the shallot. To a good time!
