Chicken Skewers » Simple and Healthy Recipe! ✅

This chicken skewer recipe is perfect as a snack or as part of a meal the whole family can serve.

Chicken Skewers Ingredients:

  • 2 tablespoons chopped parsley
  • 2 tablespoons minced mint
  • 2 tablespoons chopped chives
  • 2 tablespoons olive oil
  • juice of one lemon
  • 400 g skinless chicken breasts, cut into small pieces
  • 1 red onion
  • 1 red bell pepper, seeded and cut into 3cm cubes
  • 1 lemon, cut into 8 wedges
  • Salt and pepper

Ingredients for seasoning:

  • 8 ripe cherry tomatoes on the vine
  • 2 green chilies
  • 2 small garlic cloves, finely minced
  • 2 tablespoons olive oil
  • 2 tablespoons white wine vinegar


  1. Combine herbs, oil, lemon juice, salt and pepper in a large bowl and add chicken pieces.
  2. Cut the red onion into six wedges, then separate the layers on each wedge.
  3. Add the onion and bell pepper to the marinade and mix well.
  4. For the dressing, cut the cherry tomatoes into quarters and remove the seeds.
  5. Mix the tomatoes, chiles, garlic, oil, vinegar, salt and pepper and pour into a saucer.
  6. Arrange chicken, bell peppers, and onion on skewers, each ending with a lemon wedge.
  7. Grill over medium-high heat for 5-6 minutes per side or cook on a barbecue, making sure the chicken is cooked through.
  8. Serve on a tray with tomato sauce.
