Of all the proteins, I like to cook chicken the best. Tender tender is not only simple and easy to cook, but it’s also a great way to absorb flavors and ingredients. Chicken is so versatile because it can literally be used with any recipe.

The first time I made this tomato chicken recipe I knew it would be an instant hit. Garden fresh tomatoes added such a balanced flavor that reminded me of spring and summer.

Because the ingredients used in this tomato chicken are minimal, it keeps the chicken moist and flavorful without being overbearing. The last thing I want to happen to my chicken is for it to be soggy, salty, or overly seasoned.

ingredients

Olive oil – I like to use olive oil, but coconut oil and avocado oil would be fine too.

Chicken breast – Boneless skinless chicken breasts are my favorite cut.

Salt and pepper – Taste.

fresh tomatoes – Any kind of fresh tomato will do. You can also use cherry tomatoes for this recipe.

Garlic cloves – Minced garlic gives this dish more flavor.

How to make tomato chicken

First step: Heat oil over medium-high heat. Sprinkle the chicken with salt and pepper.

Second step: Add chicken to skillet. Cook for 3 minutes.

Step three: Flip and add the garlic to the pan between the chicken breasts. Cook for 2 minutes.

Step four: Add the tomatoes. Cook until chicken is 160 when checked with an internal thermometer.

step five: Remove the chicken to a serving plate. Cook the tomatoes until they start to split, another 4-5 minutes. Pour over chicken. Serve the tomato chicken immediately.

variations

add the paste – If you really want to give the texture of the dish a boost, you can cook it and mix it with angel hair pasta or another type of al dente noodles. This will add to the overall carbs in the dish, but it’s a great option. For a low-carb option, choose spaghetti hearts of palm instead.

canned tomatoes – In a pinch, canned tomatoes will be fine for this recipe, but fresh ones are always best. If you want to use preserves, choose a high quality tomato such as San Marzano.

Add more herbs and vegetables. – Cooked spinach is a great addition and a fun way to add some color. Mixing in some fresh basil also adds a hint of flavor. Adding some dried oregano and chili flakes is also a great way to add a different flavor. Onions can be sauteed along with garlic.

Decorate or mix with cheeses – A very simple way to add flavor is to add mozzarella or decorate with Parmesan cheese. Which, combined with the fresh tomato/tomato sauce, will give it an Italian flavor.

Squeeze fresh lemon juice on top – For a spicy addition, a little lemon juice and citrus on top is a great idea. Just a tablespoon or so should be fine.

Creamy – If you love vodka sauce, add a splash of cream in the last minute of cooking for a creamy pink sauce.

Balsamic – Balsamic vinegar can be a nice touch of sauce. Add a splash along with the tomatoes.

Common questions

What side dishes go well with this chicken appetizer?

Since chicken in tomato sauce is already a good meal, a good salad would be a great option. It’s low in calories and will add a heavy load of veggies.

The main difference between the two is the story. Marinara is more of a “sauce” while tomato is made up of thick chunks of tomatoes that are sliced and left at that consistency.

Yes, as long as you use gluten-free ingredients, it is! Since no flour is added to the instructions, anyone eating gluten free should be able to enjoy this dish.

How do you store leftovers?

Be sure to drain any excess liquid that may be in the pan from the tomatoes, and then store them in an airtight container. When ready to eat, you can reheat it over medium heat on the stovetop or in the microwave.

Just be careful not to overheat the tomato chicken as it will dry out. Low and slow tends to be the key when you want to reheat leftover chicken.
