Chocolate Coconut Pudding » Simple and Healthy Recipe! ✅

An old-fashioned pudding, rich in cocoa and bittersweet chocolate. A little coconut milk and rum add subtle flavor, and toasted coconut flakes provide a crunchy dressing. -Woman

  • 1/2 cup packed light brown sugar

  • 2 tablespoons cornstarch

  • 1/2 cup unsweetened cocoa powder, sifted and poured into measuring cup

  • 1 pinch of salt

  • 1 cup unsweetened coconut milk, preferably whole

  • 1 cup whole milk

  • 2 egg yolks

  • 1 ounce bittersweet or semisweet chocolate, finely chopped

  • 1 tablespoon dark rum (optional, substitute 2 teaspoons vanilla extract if preferred)

  • Soft cream, to decorate

  • Lightly toasted coconut flakes, to decorate

  1. In a heavy 2-quart saucepan, combine the brown sugar, cornstarch, cocoa powder, and salt. In a small bowl whisk together the coconut milk, whole milk, and egg yolks to combine. Gradually mix the milk mixture with the sugar and cocoa mixture.

  2. Put the saucepan on the stove, over medium heat, and cook, stirring constantly, until the pudding thickens and boils. Turn the heat down a bit and let it simmer for about a minute. Remove from heat and add the chopped chocolate. Whisk gently until the chocolate melts and is incorporated into the mixture. Add the rum.

  3. Pour the pudding into the dessert plates, cover the surface directly with cling film and chill. Refrigerate to chill. When ready to serve, whip a large amount of cream until firm. Cover the puddings and sprinkle with the toasted coconut drops. Refrigerate leftovers.
