No Bake Eclair Cake
My husband LOVES donuts. He often invites our girls to the donut shop, but I think it’s as much for him as it is for them!
One of my favorite things to buy at the donut shop is a cream puff – I love the rich filling and of course the chocolate glaze! It’s so decadent!
This chocolate eclair cake is inspired by donut shop favorites, except this cake is SO much easier to make! There are only 4 simple ingredients and no cooking required!

What is an Eclair?
An éclair is a French choux pastry filled with cream and covered in chocolate. Choux pastry is a light, crumbly dough that is also used for cream puffs.
The eclairs you’ll find at a typical donut shop are based on that traditional dessert, but probably use regular yeast donut dough. Still delicious anyway!!
This cake is based on the three components of an eclair: batter (graham cracker), custard (our whipped pudding), and chocolate topping. When everything is layered, the graham crackers soften and all the flavors start to melt away for a truly delicious experience.

- Whipped Dressing – Like the cold beater
- vanilla instant pudding more milk to make pudding
- graham cracker – A large box should cover it.
- Chocolate glaze – A can of store-bought icing

How to make No Bake Eclair Cake
First prepare the pudding according to the instructions on the box. Fold the whipped topping into the pudding bowl and stir until blended.
Now just layer your eclair cake:
- Cracker Graham, topped with half the pudding mix
- Second layer of whole grain crackers, garnished with remaining pudding
- Third layer of graham crackers
- Chocolate glaze
Place the cake in the refrigerator to chill for at least two hours before cutting.
Can you use homemade icing?
Absolutely! To be honest, I think homemade flavors are even better! It just takes a little longer to cook the frosting and allow it to fully solidify, so you’ll want to plan ahead.
Ingredients for homemade chocolate glaze
- Granulated sugar
- unsweetened cocoa
- salted butter
- Vanilla extract
In a saucepan over medium heat, add the milk, sugar, and unsweetened cocoa and bring to a boil. When it starts to boil, let it cook for 2 minutes.
Turn off the heat, add the butter and vanilla and mix. Let the icing cool slightly so it’s not hot. While still hot, pour over the top of your cake and spread to evenly coat.
Store in the refrigerator for several hours, or better yet overnight.

- 1 regular size bowl with chilled whisk
- 5 oz vanilla instant pudding plus milk for making pudding
- 14 oz graham crackers 1 typical box
- 1 cup chocolate frosting up to a can if needed
homemade chocolate coating
- ¼ cup of milk
- 1 cup granulated sugar
- ⅓ cup unsweetened cocoa
- ⅓ cup salted butter
- 1 teaspoon vanilla
No Bake Eclair Cake Instructions
Prepare the pudding according to the instructions on the box.
Pour the whipped topping into the bowl with the pudding and use a large spoon or spatula to bring the two together.
Line the bottom of a 9×13 pan with a layer of whole grain crackers. Top with half of the pudding mix.
Add another layer of graham crackers, then top with remaining pudding mix.
Add a third layer of graham crackers and top with the chocolate glaze.
Chill for at least 2 hours.
Instructions for Making Homemade Chocolate Frosting (Instead of Canned Frosting)
In a saucepan over medium heat, add the milk, sugar, and unsweetened cocoa and bring to a boil.
When it starts to boil, boil for 2 minutes.
Turn off the heat, add the butter and vanilla and mix. Let cool for a few minutes, then pour over graham crackers while chocolate is still hot.
Refrigerate for several hours or overnight.
