One of my favorite things about summer is all the fresh fruit available. Most of the time I struggle to keep the berries fresh in the house. Now don’t get me wrong.

I’m not complaining about our kids gobbling up fresh fruit. In fact, I’m glad you like to eat fruit over cookies and candy. Well, most of the time anyway.

Everyone gets their sweet tooth from me, and there are times when it hits the candy tooth. You all know where I hide my stash of different cookies and candies that I use to make M&M Blonde Brownies and Mocha Oreo Milkshake.

In fact, there have been a few times lately where I’ve found half-empty packets of cookies and candy because teenagers have stolen a few here and there.

Usually when I buy fruit for a specific recipe, I have to let everyone in the house know that it’s off limits. Otherwise, fruit boxes start disappearing just like cookies and candy.

Our youngest loves blueberries. He is known for taking down an entire container in one day.

So when I wanted to do this berry coffee cake again, I had to make sure he knew he was using blueberries from the start and he couldn’t eat them. I usually remember buying two boxes, but this time I only received one.

In fact, I bought the largest box and didn’t use all of them, so he got excited when I told him the extra fruit was all his.

Our oldest son ate most of this three berry coffee cake. In fact, she dug into it while waiting for it to cool down. He didn’t even wait for the icing. Just so you know, he says hot from the oven is the best way to go with this breakfast cake.

And he’s pretty honest with me as to whether a recipe is good or not. There were some who told me that they were not worthy of a blog. LOL! I’m happy to raise such brutally honest guys.

But really, how can you go wrong with a coffee cake with fresh berries, streusel, and a sweet icing? You just can’t!

How to make a Three Berry Coffee Cake:

Pie: Mix the dry ingredients. Stir in milk, eggs, and melted butter until batter is mixed. Roll out the cake batter in a greased pan.

Berries: Spoon an even amount of blueberries, blackberries, and raspberries over the cake batter. It’s okay if the berries start to sink.

STREUSEL: Cut the cold butter into the ingredients for the topping with a pastry blender. As it begins to form, use your hands to bunch the streusel up into larger pieces. Sprinkle streusel over all berries and pie crust.

Baking: As the coffee cake cooks, the cake layer will rise around the berries and streusel creating pockets of each within the cake when finished.

Nail polish: Mix the powdered sugar and milk and sprinkle in strips on the cooled cake.

Can you use any other fruit in this coffee cake?

Sure you can. Any fresh berry will work in this cake. Or you could use a whole berry if you like. The use of all blueberries makes the most amazing Blueberry Coffee Cakejust so you know.

How do you store a coffee cake?

A freshly baked coffee cake will keep on the counter for 1-2 days if covered properly. If you are going to keep it longer, store it in the refrigerator in a tightly closed container.

for the cake

  • 2 cups all-purpose flour

  • 1 cup granulated sugar

  • 1 tablespoon baking powder

  • ½ teaspoon of salt

  • 2 large eggs

  • 1 cup of milk

  • ¼ cup unsalted butter, melted

  • 1 cup of blueberries

  • 1 cup of blackberries

  • 1 cup of raspberries

for the seasoning

  • 1 cup all-purpose flour

  • ½ cup oatmeal

  • ½ cup packed brown sugar

  • 2 teaspoons of cinnamon

  • ½ cup cold unsalted butter

for the icing

Instructions

  1. Preheat oven to 375 degrees. Spray a 9×13 pan with nonstick spray.
  2. Combine all topping ingredients in a bowl. Cut the butter into the dry ingredients with a fork or blender until they resemble coarse crumbs. Use your hands to bulk up the mixture into larger pieces. Set aside.
  3. In a bowl, sift the dry ingredients together. Make a hole in the center and add the milk, eggs and melted butter. Beat lightly until a dough forms. Don’t hit too much.
  4. Spread the dough into the prepared pan. Add the berries on top of the dough. Sprinkle garnish over berries. Cook for 45 minutes. Freddo.
  5. Mix the powdered sugar and milk. Sprinkle top of cooled coffee cake.
