Chick-Fil-a Mac n Cheese Toppings

Noodles: You will need 1 pound of elbow spaghetti (macaroni) to make this a traditional mac and cheese.

Butter: Use 1/4 cup of butter (half a stick) to make roux.

Flour: You will need 1/4 cup of all-purpose flour to help thicken the cheese mixture.

SaltDipping: Add 1 teaspoon of salt to bring out the flavors of this cheesy sauce.

Peppers: To add color and some flavor, add 1/8 teaspoon ground paprika. This is about 1 pinch.

Milk: Use 2 cups of whole milk for the cheese sauce base. This will make it creamy and smooth. Use nothing less than whole milk to ensure creamy mac and cheese.

Egg: The addition of 1 egg yolk really kicks this cheesy sauce up to the next level by adding so much richness and color.

cheeses: You will need 8 slices of American cheese, 16 ounces of freshly shredded extra sharp cheddar cheese, and 1 cup of shredded Italian mixed cheese, but the cheese will split during the steps.

How to Make Chick-Fil-A Copycat Macaroni and Cheese

cook the noodles

Bring a large pot of salted water to a boil.

Add the macaroni and boil for 20 minutes. Yes, 20 minutes. While I realize this goes against everything you know about cooking noodles, this is very important! The longer boiling time will give you super creamy results as the noodles won’t absorb too much of the cheese sauce and will dry them out.

Drain the noodles and set them aside until needed.

make a cheese dip

While the noodles are cooking, prepare the cheese sauce.

In a large saucepan, over medium heat, melt the butter.

Add the flour, salt and paprika and stir continuously until well blended.

Add the milk little by little, little by little, until it is completely absorbed.

Continue whisking and cooking for another minute or two or until thickened.

Temper the egg yolk by placing the egg yolk in a bowl. Add a tablespoon of the hot milk mixture to the egg yolk and immediately mix to combine. Wait a minute and then do it again.

Add the egg yolk mixture to the milk mixture in the pot and whisk to combine.

Lower the heat and slowly start adding the cheeses.

Cut the American cheese into chunks and add it to the pot.

Add half of the cheddar cheese and all of the Italian cheese mixture.

Whisk to combine until cheese has melted. This can take about 10 to 12 minutes of continuous flapping. You can tell that the cheese is fully incorporated when you lift the whisk and the melted cheese is not coming off the sauce.

Combine

After all the cheese has melted into the sauce, add the noodles.

Gently mix until everything is incorporated.

Baking

Arrange mac and cheese in a 9×13 pan and garnish with remaining cheddar cheese.

Place under rack in oven until top of cheese is golden brown. Do not take your eyes off the plate, otherwise it will burn!

Remove from grill and let cool slightly before serving.

Tips for Making Macaroni and Cheese Like Chick-Fil-a

Chick-Fil-a likes to use a blend of Parmesan and Romano cheese, so we chose to use Italian cheese blends that already contain these two types of cheese. And while you can cut down on the time by using pre-shredded cheddar, I recommend hand-shredding for best results because it will give you a much smoother sauce and better top. Previously shredded cheese has anti-caking agents, which prevent it from melting smoothly and completely amalgamating. To a good time!
