One of my annoyances when baking is that the cake seems to have the tree on it for most of the year. Everyone breaks out their pie plates in the fall to make a traditional pumpkin pie, so the plate sits there for the rest of the year.

I understand because I am guilty of the same thing. The cake is not one of those desserts that I prepare very often at other times of the year. This must change for sure!

A few years ago I came up with a recipe for homemade apple pie filling and then I made this Apple Pie with Cheesecake. That apple pie has quickly become one of our favorite fall desserts.

It was so popular that we included it in our cookbook. cheesecake love what’s more.

My husband loves anything with an apple in it, so he gets excited when I start making apple puddings.

I decided to make another apple pie this year, but with a little twist. Instead of adding a layer of cheesecake to the bottom, I added a double dose of oatmeal crumble on top.

Warm apple pie filling, crunchy topping and melted vanilla ice cream…you see where this is going, right? This pie has all the makings of a quick apple pie or Dutch apple pie.

We had good intentions to share this apple pie with friends. But she forgot because we were chatting outside around the fire. Whoops! The hosting fails right there.

I probably should have made the cake with the rest of the meal, instead of thinking I’d do it later.

Do yourself a favor and make this easy apple pie for your Thanksgiving dessert table this year. It will not last long. I know because we devoured it in no time!

How to make this Apple Crisp Pie:

  1. Prepare the homemade apple pie filling the night before. It needs time to cool and thicken before you put it into the cake batter.
  2. Let store-bought pie dough sit on the counter for about 15 minutes before trying to unroll it. I usually get impatient and try to do it too soon. However, no problem. Simply press the tears together if necessary. You can also make a homemade cake if you prefer.
  3. Mix flour, sugar, oatmeal, spices and butter until crumbly.
  4. Don’t skimp on the oatmeal topping. You may think it’s too much, but believe me and use all of it for the cake.
  5. Cover your dough with a cake liner if you are concerned about the edges darkening too much during baking.
  6. Serve apple pie warm with lots of ice cream and caramel topping. You can also serve it with homemade whipped cream, if you prefer.

ingredients

  • 1 cold pie crust

  • 4 cups homemade apple pie filling

  • ½ cup all-purpose flour

  • ½ cup quick oats

  • ½ cup packed brown sugar

  • 2 teaspoons of cinnamon

  • 1 teaspoon of nutmeg

  • ½ teaspoon ground star anise

  • ¼ cup unsalted butter, melted

Instructions

  1. Preheat oven to 375 degrees F. Place pie crust in pan and fold in edges.
  2. Pour pie filling into crust.
  3. Mix flour, oats, brown sugar, cinnamon, nutmeg, star anise, and butter until crumbs form.
  4. Spoon mixture over apple pie filling. Cook for 35-40 minutes.
  5. Let cool on a rack. Serve with ice cream and caramel topping if desired.
