CUCUMBER CRACK RECIPE

Cucumber Cream Cheese Spread is perfect on bagels or crackers. Fresh cucumbers, green onions, Worcestershire sauce and cream cheese. If you’re a fan of bagels and cream cheese or if you like to snack on crackers with a little cream on top, then this cream will really please you. My friend Patti calls it “Ccumber Crack.” Oh!

IS IT LOW CARB OR CHETOFRIENDLY?

I do it quite frequently for myself and my friends. It’s great for a snack or you can make a meal of it by spreading it on a lightly toasted bun and eating it for lunch. It is also a refreshing snack. And yes, it’s low carb! My low carb friends enjoy eating it in low carb tortillas or even sliced zucchini.

REQUIRED INGREDIENTS: (FULL RECIPE AT THE BOTTOM OF POST)

  • cucumber
  • Green onions
  • cream cheese
  • English sauce
  • Salt

HOW TO PREPARE THE CUCUMBER CHEESE SPREAD:

To make in food processor: Remove roots from base of spring onion, place in food processor. Add cucumber to bowl of food processor.

Cover and work until coarsely chopped (DO NOT OVERWORK!)

Add cream cheese, Worcestershire sauce, and salt. Cover and work until smooth.

Transfer to a medium bowl. Cover and refrigerate overnight to let the flavors meld.

Note: If you don’t have a food processor, finely chop the cucumber and green onions. In a medium bowl, combine cucumber, green onions, softened cream cheese, Worcestershire sauce, and salt.
