  • Oil-Canola or vegetable oil will work.
  • Sugar-granulated white sugar
  • Vanilla-this is a great accent for cocoa, don’t leave it out.
  • Flour-all purposes
  • Cocoa-Use good quality unsweetened cocoa powder.
  • Zucchini-Small or large courgettes are good for this, do not drain the courgettes
  • Chocolate chips- I use dark chocolate chips but any kind is fine

How to make zucchini brownies

The wet ingredients are added to a bowl and mixed.

  • Step 1– Chop the courgettes in a small bowl and set aside. In a large bowl put the oil, sugar and vanilla.
  • Step 2– Mix the wet ingredients.

The dry ingredients are whisked together and then added to the wet ingredients.

  • Step 3– In a separate small bowl, mix the dry ingredients.
  • Step 4-Mix the flour mixture with the sugar and the oil. The dough will look very dry and this is normal.

  • Step 6-Add the chocolate chips and once everything is mixed spread the dough in a Prepared bread 9×13 in line with parchment or sprayed with spray oil.

  • 1/2 cup vegetable or canola oil

  • 1 1/2 cups granulated sugar

  • 1 spoon of vanilla

  • 2 cups all-purpose flour

  • 1/2 cup unsweetened cocoa powder

  • 1 1/2 teaspoons baking soda

  • 1 teaspoon salt

  • 3 cups of grated zucchini

  • 1 1/4 cups chocolate chips divided

Instructions

  1. Preheat oven to 350 degrees. row to 9 × 13 tray with parchment paper or spray with cooking spray.
  2. Chop the courgettes with a cheese grater or food processor with grater option in a bowl and set aside. (do not drain)
  3. In a large bowl put the oil, sugar and vanilla and mix with a wooden spoon until the mixture is homogeneous.
  4. In a small bowl, add the flour, cocoa powder, baking soda, and salt until smooth.
  5. Combine the dry and wet ingredients and use the wooden spoon to mix. The dough will be dry.
  6. Add the zucchini cut into strips and let stand for 10 minutes so that the zucchini releases its liquid, then finish mixing the dough.
  7. Fold 1 cup of chocolate chips into the batter. Spread the dough into the prepared pan. Sprinkle top with remaining chocolate chips.
  8. Bake for 25-35 minutes, you will know when they are cooked when you insert a toothpick in the center and it comes out clean.
