These potatoes are so easy to make with just a few simple ingredients. Rinse and scrub the potatoes. Using a knife or mandolin, cut the potatoes into thin slices. Place potato wedges in a ziplock bag or large bowl. Season the potatoes with olive oil. Add the Italian seasoning, salt, and black pepper to the oil mixture. Toss the potatoes to coat them with the oil and spices.

Line a large sided baking sheet with foil or parchment paper and spray with cooking spray. Arrange the potatoes in a single layer on the baking sheet. Cook for 20 minutes, or until lightly browned. Sprinkle the potatoes with grated Parmesan cheese. Cook for another 5 minutes.

  • Feel free to mix the herbs into the potatoes. Garlic powder, paprika, taco seasoning, cumin, it’s all good.

  • 2 large potatoes, washed
  • 3 tablespoons olive oil
  • 1 tablespoon Italian dressing
  • Salt and pepper to taste
  • 6 tablespoons Parmesan cheese
  • Preheat oven to 450ºF. Line a rimmed baking sheet with aluminum foil.

  • Cut the potatoes into very thin slices (¼ inch). Place potato wedges in a gallon size ziplock bag.

  • Pour olive oil, Italian dressing, and salt into a ziplock bag and toss to coat potatoes.

  • Arrange the potatoes in a single layer on the prepared baking sheet.
