Tips for the best tortellini salad:

This recipe is super easy to make and is super quick and easy to prepare, so take the time to follow these additional tips to make this the best pasta salad you’ll ever make.

  • Don’t overcook the noodles: Your pasta salad will get soggy if your noodles are too soft. Also, the acids in the dressing will continue to break down the starches in the pasta as it solidifies.
  • Surprise the noodles: When the noodles are cooked al dente, drain them. Next, place the pasta strainer in an ice bath (equal parts ice and water). This will prevent the noodles from further cooking.
  • Chill the pasta: Even if you don’t choose to scandalize the noodles, be sure to let the pasta cool before adding it to the vegetables. This is because you don’t want the warm pasta to get soggy in the sauce and become chewy. Also, you don’t want the heat from the pasta to cook the vegetables.
  • Continue: Let the pasta salad rest before serving. This will give the flavors time to permeate the pasta. Cover and let rest for at least 1 hour before serving for best results.
  • Cut the ingredients the same size. Make sure all vegetables are chopped before adding them. Think about trying to put a little bit of everything in each bite.

Serve and store the salad cold:

When Italian Tortellini Pasta Salad cools, the flavors can become more delicate. So taste it before serving it. Then decide if you need to add any additional seasonings before serving. Store in the refrigerator for up to 3-5 days. Although, I find it tastier the second day. Do not leave at room temperature for more than 2 hours.
