- 1-1/4 pounds boneless, skinless chicken thighs, cut into 1-inch pieces
- 1 medium zucchini, sliced 1/4-inch thick
- 1 medium red bell pepper, sliced
- 1 cup chopped green beans
- 1 medium tomato cut into large chunks
- 1/4 cup thinly sliced onions
- 2 ounces sliced mushrooms
- 1 minced garlic clove
- 1/4 cup avocado oil
- 1 tablespoon minced fresh rosemary
- 1-1/2 teaspoons salt
- 1 teaspoon dried oregano leaves
- 1/2 teaspoon black pepper
- Grated Parmesan to serve (optional)
Preheat oven to 400°F. Cut 4 pieces of foil each about 12 inches square.
In a large bowl, combine chicken, zucchini, pepper, green beans, tomato, onion, mushrooms, and garlic. Drizzle with oil, then sprinkle with rosemary, salt, oregano, and pepper. Stir to mix well.
Divide the mixture evenly among the pieces of foil, placing it in the center of each piece. Lift both sides of the sheet up and fold twice to seal. Fold the ends well.
Place packets on a rimmed baking sheet and cook for 25 minutes, or until chicken is cooked through.
Remove the packages and open the top seams. Sprinkle with grated Parmesan cheese, if using. Consume directly from the container or transfer to plates.
