If you plan to invite some friends over for morning coffee or afternoon tea, why not try healthy, tasty, low-calorie and easy-to-make cakes? Children can enjoy a treat with more natural ingredients and can be stored for a few days in airtight containers.

The most popular I have found is healthy banana bread and later in the week we’ll share another delicious sugar free cake for you to try.

Eating healthy doesn’t mean you can’t indulge in a weird treat in moderation, of course, the two can easily be combined if you can avoid buying cakes and spending fifteen minutes making them yourself. There is nothing better than walking into a home and being greeted by the aroma of home cooking wafting from the kitchen. If your recipe relies on the natural sugar found in fruit, then you’re off to a good start. Swapping white flour for whole wheat flour adds dietary fiber and several B vitamins that can be destroyed in the refining process. Bananas contain fiber, potassium, vitamin C and B6 that support heart health. Bananas also contain tryptophan, an amino acid that studies suggest plays a role in improving mood and memory. They are good for gut health and the vitamin A content helps protect the eyes and promote normal vision.

ingredients

4 very ripe medium bananas

2 teaspoons of baking powder

½ teaspoon baking soda

2 cups whole wheat flour

½ teaspoon cinnamon

1-2 eggs

2/3 tablespoons of sunflower oil

½ cup unsweetened orange juice

2/3 tablespoon walnuts (small chopped)

You can add 1 tablespoon canderel or stevia if you prefer additional sweetness.

Indications

Preheat oven to 360 degrees (180 degrees or 160 degrees for convection oven)

Combine the flour, baking powder, baking soda, and cinnamon in a bowl. Mix them together.

Place the ripe bananas in a blender and blend until smooth.

Mix coconut oil, orange juice, walnuts, egg and sweetener, add banana and flour mixture and mix well.

Spray loaf pan with cooking spray. Pour the mixture.

Cook for 40-50 minutes.

Cool on a rack and enjoy.
