Feta Chicken and Tomato

Tomato Feta Chicken – This chicken dish is packed with delicious flavors provided by the mix of herbs and dried tomatoes mixed with feta cheese. It is low in calories, high in protein, and low in saturated fat, making it a perfect choice for a healthy diet.


4 chicken breast halves (about 6 ounces breast x2)

2 cups of water

½ cup dried tomatoes (without oil)

2 ounces feta cheese (about ½ cup)

2 teaspoons chopped fresh basil

1 teaspoon minced oregano

½ teaspoon finely minced garlic

¾ teaspoon freshly ground black pepper

½ teaspoon kosher salt

½ teaspoon lemon zest

¼ cup chicken broth

2 teaspoons finely chopped basil

2 teaspoons butter or light cream spread (optional)


Preheat oven to 425 degrees F (220 degrees C)

Bring 2 cups of water to a boil in a saucepan. Add the tomatoes.

Remove from heat and let stand for two minutes.

Drain and cut into thin strips.

In a bowl, combine the tomatoes, cheese, basil, oregano, garlic, and a quarter teaspoon of pepper.

Place chicken breast on foil and beat until flat.

Cut a horizontal slit in each half to form a deep pocket.

Fill a quarter of the mixture into each of the four chicken breast halves.

Sprinkle with a little salt and the rest of the pepper.

Cut four squares of foil for each piece of chicken.

Put half a teaspoon of butter on each piece of aluminum foil and place the chicken on top.

Put 1/8 teaspoon of lemon zest and a tablespoon of chicken broth on top of each piece of chicken.

Fold foil to form 4 packets. Seal the edges well.

Bake in the preheated oven for 20 minutes.

Remove from the oven, carefully open the packages and cut each half of the chicken.

Serve on a bed of green salad. Garnish with a pinch of basil.
