Freekeh! Lemon Spiced Smoked Wheat with Creamy French Feta » Easy and Healthy Recipe! ✅

I am in love with freekeh, green wheat that is roasted and has a smoky flavor and nutty texture. It’s perfect with creamy French feta cheese, nice ripe tomatoes and olive oil. Here, I used April Bloomfield’s Lemon Caper Dressing, http://food52.com/recipes…, to dress a cereal salad. The chickpeas pack enough weight to be an appetizer, and the fresh basil and jalapeno brighten things up. —Clintonhillbilly

ingredients
  • 1 cup freekeh, raw

  • 2 ripe tomatoes, chopped

  • 3/4 recipe Bloomfield’s April Lemon Caper Dressing

  • 3/4 cup high quality olives

  • 2/3 cup fresh basil, torn or chopped

  • 3 ounces French feta cheese

  • 1 can chick peas, drained and rinsed

  • 1/2 jalapeno, chopped

  • 2 cups of water

Indications
  1. First, put 1 cup of freekeh and 2 cups of water in a saucepan and bring to a boil. Cover and simmer for about 40 minutes, until the freekeh is soft. It will retain a slightly chewy texture.

  2. While the freekeh is cooking, prepare the April Bloomfield Lemon Caper Dressing. The advanced 1/4 recipe is great for fish or asparagus with hard-boiled eggs.

  3. When the freekeh is cooked, add the dressing, tomatoes, feta, chickpeas, jalapeno, and olives to topping and toss to combine. Ideally, let it cool to room temperature before serving.
