Fresh Raspberries with Lemon White Chocolate Ganache » Simple and Healthy Recipe! ✅

This spin-off of “Chocolate Decadence” is a little less decadent than the original recipe, because in this version raspberries dominate and the supporting role is taken by a lemon-infused white chocolate ganache that clings to the berries like a blanket. Elegant. The ganache thickens as it cools, sealing in the fruit so the berries stay plump and juicy. I made it for the 4th of July: red berries, white cream, and blue-black raspberries. -Apple-Annie

  • 1 liter fresh red raspberries, rinsed and dried

  • 1 liter fresh black raspberries, rinsed and dried

  • 3.5 ounces sweetened white chocolate (1 bar)

  • 1 teaspoon lemon zest (from ½ lemon – a generous teaspoon)

  • 1 tablespoon amaretto

  • 1-2 teaspoons of soft honey

  • 1/2 cup fresh cream

  1. Arrange raspberries in 4 serving bowls.

  2. Melt the white chocolate (on the stove or in the microwave).

  3. Add lemon zest to melted chocolate.

  4. Add the honey and amaretto and mix well.

  5. Add the crème fraiche and mix until smooth.

  6. Pour three tablespoons of white chocolate ganache over each bowl of berries.

  7. Refrigerate for at least half an hour to harden the ganache.
