Fried Rice with Roasted Mushrooms

ingredients
  • 2 pounds mixed wild mushrooms (such as shiitake, oyster, enoki, hon shimeji, or similar)

  • 5 cloves of garlic

  • 1 neutral oil spray

  • 1 pinch of kosher salt

  • 1 pinch of freshly ground black pepper

  • 4 cups cooked white rice, completely cooled

  • 1 tablespoon soy sauce, or to taste

  • 1 tablespoon sesame oil

  • 1 tablespoon fish sauce

  • 2 tablespoons unsalted butter

  • 3 to 4 large eggs (1 per person)

  • 1 bunch shallots, chopped

  • 2 red chillies cut into thin slices

  • 1/2 cup cilantro, chopped

  • Roasted sesame seeds

Indications
  1. Heat oven to 400°F. Clean mushrooms and cut into chunks. Grill mushrooms for 30-40 minutes, checking every 20 minutes and turning for even toasting.

  2. When the mushrooms are toasted and crispy, place the pan on the stove and lower the heat. Add the rice and mix gently with the mushrooms. Add soy sauce, fish sauce and sesame oil. Mix well and season with salt if necessary.

  3. Break the butter into small pieces and place it on the edges of the pan.

  4. Make small holes in the rice and crack the eggs into them. Let them steam and fry until the eggs are fully cooked. When the bottom sizzles and becomes crisp, the rice should be ready to serve.

  5. Garnish with chives, chili, cilantro, and toasted sesame seeds.
