Greek Lima Bean Salad » Simple and Healthy Recipe! ✅

A simple cold bean salad that holds up well in transit. Like most bean salads, it’s best made the night before, adding the feta and parsley before serving. —Sam1148

  • 1 package of frozen beans.

  • 2 tablespoons lemon juice

  • 6 tablespoons olive oil

  • 1/2 teaspoon salt

  • 1 tablespoon of fresh oregano. (or 1 dry teaspoon)

  • 1/2 cup chopped fresh parsley

  • 1 teaspoon minced garlic

  • 1/2 cup crumbled feta cheese

  • 1/2 cup cherry tomatoes, halved or chopped

  1. Microwave or boil the lima beans a little less than the package directions indicate. You want these to have some body. For frozen beans, just thaw them in the microwave and they’ll be fine. Boiling them for 1-2 minutes and draining them is the other option if using frozen lima beans. They should bite into them and not be soft.

  2. Whisk together lemon juice, oil, oregano, garlic, and salt.

  3. Toss beans and tomatoes with dressing and chill for at least 1 hour, preferably overnight. Before serving, add the feta cheese and parsley. Adjust seasoning with more salt and pepper to taste.
