Greek Yogurt Pancakes with Apple and Cinnamon » Simple and Healthy Recipe! ✅

Light and fluffy pancakes with apple-cinnamon Greek yogurt topped with apples sautéed in coconut oil and maple syrup. These lightened gluten-free pancakes are an irresistible fall breakfast! -Megan Olson

  • 1 cup of GF oat flakes

  • 1/2 cup nonfat Greek yogurt

  • 1/2 cup unsweetened applesauce

  • 2 egg whites

  • 1 tablespoon unsweetened vanilla almond milk

  • 1 teaspoon baking powder

  • 1 teaspoon of cinnamon

  • 1 pinch of sea salt

  • 1/2 teaspoon almond extract

  • 1 tablespoon of cinnamon

  • 1 tablespoon reduced sugar maple syrup

  • 1 teaspoon coconut oil

  • 2 medium apples, peeled and cut into quarters

  1. Heat a skillet over medium-high heat

  2. Spray the pan with cooking spray

  3. In a blender, food processor, or hand mixer, add the ingredients for the pancakes

  4. Work until the dough is smooth, it will be liquid.

  5. In the pan, add 2-3 tablespoons of the batter at a time to form a pancake

  6. Cook for 3-4 minutes until pancakes just start to boil, then flip and cook another 2-3 minutes

  7. Place the pancakes on a wire rack to cool while you cook the remaining batter.

  8. Heat a small skillet over medium heat

  9. Add the maple syrup and coconut oil.

  10. When the syrup and oil begin to boil and thicken, add the apples and generously decorate with cinnamon.

  11. Toss apples in pan to evenly coat

  12. Simmer for 8-10 minutes until apples soften.

  13. Serve the pancakes, decorate with apples and maple syrup
