Grilled Asparagus with Feta » Simple and healthy recipe! ✅

Asparagus has long been one of my family’s favorite vegetables. My mother also collected the stalks of wild asparagus that grew near the farm and blanched them, obviously seasoned with a little butter.

I’m all for cooked vegetables in many ways, but grilling is my new go-to method. They develop a lot of flavor and color this way. For these Grilled Asparagus with Feta, toppings include chopped fresh dill, lemon juice, and the salty, creamy flavor of feta. It looks fancy, but this dish is so simple that you can add it to just about any dinner without too much fuss.

To start, you will need to cut off the ends and then cut the stems in half. I found that many of mine needed to be trimmed higher to prevent the strand from the bottom of the stems from ending up in the end plate.

Once cut, place them in a pan with a splash of oil, salt and pepper. I ended up dividing the asparagus between 2 trays to make sure they weren’t too stuffed. This way more pieces can brown and develop that delicious grilled flavor.

Once out of the oven, all that remains is to add the toppings and then watch as this tasty dish magically disappears from the table.

  • 2 pounds asparagus, ends sliced ​​and halved
  • 3 tablespoons olive oil
  • Salt and pepper to taste
  • juice of 1 large lemon
  • 4 ounces feta cheese, crumbled
  • 2 teaspoons chopped fresh dill
  1. Put the oven on the grill on high. Place a large, deep metal pan in the oven on a wire rack about 4 inches from the rack. Let the pan heat up for 10 minutes.
  2. In a large bowl combine asparagus and olive oil. Carefully transfer the asparagus to the skillet and season with salt and pepper. Cook for 4-8 minutes or until lightly browned and tender.
  3. Put the asparagus in a large bowl and season with the lemon juice. Add cheese and dill on top and serve immediately.
