How to make compound butter

Add all ingredients except lobster tails to a small bowl and mix until well blended.

Drain the butter mixture on a piece of parchment paper and shape into a log.

You can use something with a flat edge like a paste scraper to make it easier.

Twist ends to seal and refrigerate until firm. When ready, prepare the lobster, cut the trunk into discs.

How to grill lobster tails

For me, it’s hard to beat grilled lobster! They stay moist and tender without drying out or becoming rubbery. To grill, take each lobster tail and using kitchen shears, cut the top of the shell down to the tail.

Open the shell to reveal the lobster meat, then carefully separate the lobster meal from the shell.

Pull the meat over the shells, so the meat is on top.

Place a disk of compound butter on top of each lobster tail and place on a baking sheet.

Place the rack in the top ⅓ of the oven, then turn it on. Grill lobster tails for 4 to 6 minutes (or 1 to 2 minutes per ounce) until meat is opaque and white in center. You should measure 140°F using a thermometer.

Serve with melted butter and lemon wedges on the side.

I highly recommend doubling the amount of butter compound, so you have leftovers to use on steaks, chicken, vegetables, and more!

Know your lobster shellsBasically, there are two types of shells in lobster. Hard shell and soft shell. Lobster soft shells mean that they have recently shed their shell to form a new one. The softer shell lobster has meat that is usually sweeter.

When buying lobster tails: Look for lobster tails ranging from 5 oz. 12 oz. This size is usually sweet and tender. Tails should be purchased frozen and thawed just before cooking.

Other Ways to Cook Lobster Tails

Grilled lobster tails are a great way to bring out the best flavor in your lobster, but there are many ways to cook them, so experiment with others!

Grilled: This is a super fun and super quick way to cook lobster tail. Place lobster tails, meat side up, on grill. Cook covered, over medium heat for 10-12 minutes or until meat turns opaque.

BoiledRecipe: Add lobster tails thawed in boiling water with a little keto-friendly fish seasoning. The boiling time depends on the size of the tails. You can use the following as a guide for boiling:

  • 6-7 ounce tails – 5-6 minutes
  • 8-10 ounce tails – 6-8 minutes
  • 16-20 ounce code – 10 minutes
  • Cola 20 to 24 ounces 10 to 12 minutes

Baked: Cook lobster the same way you grill it, just at a lower temperature for a little longer.
