Do you dream of summer? Transport yourself on sunny days with a fresh, fruity treat that’ll make you feel like a peach! This grilled peach melba recipe is easy to make and only requires a handful of healthy ingredients. The end result is a 95 calorie dessert filled with a beautiful combination of flavors and textures!
While we love cooking this grilled peach dessert recipe, you can easily bake it in the oven if you don’t have one (or if you’ve saved the grill for the winter!). Start by reheating the grill or preheating the oven to 400 degrees. Cut four peaches in half and remove the pit. Grill the peaches for about five minutes on each side or bake them for 15 minutes. You’ll know they’re done when they’re soft.
While the peaches are cooking, prepare a raspberry melba sauce by combining the fresh raspberries, stevia, and water in a saucepan over high heat. Put the pot on high heat and cook until the raspberries soften and turn into a sauce. You’ll also be mixing up a dreamy, creamy mascarpone filling to stuff your peaches—just grab a bowl and whisk together some mascarpone, honey, and vanilla extract. When the peaches are ready, decorate each half with the delicious mixture of mascarpone and raspberry sauce. Grab a spoon and dip into this super simple dessert!
