My older sister, Jenn, described this recipe to me at least 10 years ago and it’s the one we like to repeat every season on the grill. It’s that simple but she tastes like a much more complicated dish. It’s versatile and delicious and looks like a perfect summer dish.

If you’ve never had it or had something similar, let me tell you, you’re in for a real surprise. This dish is packed with some smoky barbecue flavors from the grill and sweet, caramelized, tangy, cheesy goodness from all the components that it really is a great combination of all the good things in life. With melted cheese on top of pineapple and marinated chicken, this recipe is juicy, tender, and easy to make.

Pineapple Cheese Chicken Ingredients

– Canned Sliced ​​Pineapple – You will need to use a 20 ounce can of sliced ​​pineapple and 1/2 cup of pineapple juice, so make sure you don’t waste any!

– Chicken Breast: Boneless, skinless chicken breasts work best for this recipe. You will need 3-4 breasts.

-Monterey Jack Cheese: We like to garnish our chicken with Monterey Jack cheese, but you can use mozzarella or even provolone if you like. About 8 or more slices will work.

-Salt and Pepper: Added to taste.

For the marinade you will need:

– Soy Sauce: You will need 2/3 cups of soy sauce. This will help add flavor and saltiness to the chicken and works in the marinade to help tenderize the meat.

-Sherry: This cooking wine works great for adding a sweet, nutty flavor to this recipe. You will need 1/3 cup of sherry.

Ground Ginger – Adding 1 teaspoon of ground ginger will make this dish taste good.

Garlic: You can use 1 minced or minced garlic clove depending on how big you want your garlic pieces to be.

-Olive oil: 2 tablespoons of olive oil will act as a fat to help distribute the marinade on the chicken and allow the flavors to blend perfectly.

How to Make Pineapple Cheese Grilled Chicken

Cut each chicken breast in half, then pound them finely.

In a large ziplock bag or bowl, add the soy sauce, sherry, ginger, garlic, and olive oil.

Open can of pineapple juice and pour ½ cup into Ziploc bag, salt and pepper if desired.

Set the remaining pineapple aside for later.

Add the chicken to the bag or bowl and let the mixture marinate for 5-6 hours, stirring and turning occasionally.

Cooked

After the chicken has finished marinating, slice the cheese and turn on the grill.

Cook chicken until almost cooked through. You can add the pineapple slices directly to the grill to reheat if desired.

To assemble

When the chicken is almost done, place a piece of pineapple on top, then top the pineapple with the cheese. Close the lid of the grill and cook for another 3-4 minutes until the cheese melts.

Remove from oven and serve with more pineapple slices. To a good time!

  • When the chicken is almost cooked, slice the cheese. Place a slice of pineapple on top, then top the pineapple with a slice of cheese. Close the lid of the grill and cook for another 3-4 minutes, until the cheese has melted.
