One of the only burgers I’ll eat are the ones from In N Out. I love the thin meatballs, the special sauce or “spread” as they like to call it and of course all the fresh ingredients. Now you can make the famous burgers at home on the grill or stovetop with this easy copycat recipe.

That special sauce makes these burgers taste amazing, so be sure to add it. My family loves adding a wedge of American cheese to a classic cheeseburger.

Ingredients needed

These are the ingredients you will need to make this burger recipe in your kitchen. I also share some tips so you can easily recreate this recipe.

  • Burger in and out
    • Ground Beef – Use the fat percentage of ground beef that you like best. I use 90/10 or 93/7, but I know a lot of people prefer more fatty beef in their burgers. Either will work as it just depends on your preferences.
    • Egg White: Helps bind the meat together so it doesn’t fall apart. We want to use only egg white so we don’t add too much moisture with the egg yolk.
    • Grated onion – Grate an onion on a cheese grater for this. If the onion produces tons of water, be sure to squeeze the excess water out of the grated onion pieces before adding it to the meat. You can also dry it with a paper towel to remove excess water.

How to Make a Copycat In N Out Burger at Home

  • Special sauce: Prepare the special sauce for hamburgers by mixing all the ingredients in a small bowl. Stir to mix well and refrigerate until ready to use.
  • Beef Meatballs: Crumble the ground beef into a mixing bowl. Add the remaining ingredients and mix gently with a wooden spoon, fork, or clean hands. You don’t want to over mix, but you want to make sure you combine everything well.

  • Meatballs: Since this is a copycat recipe, the meatballs need to be thin. In fact, I prefer thin meatballs to big thick ones. If you choose to make the larger beef patties, you won’t get 7 patties from the recipe. Of course, you can make the meatballs as large as you like, but for a true imitation burger, be sure to use skinny meatballs.
  • Toast the Burger Sandwiches: I recommend tossing the sandwiches on the grill while the burgers are cooking. No need to sprinkle or butter them, just place them on the grill to crisp up slightly and brown a bit.
  • Onion Tip: When you’re grating/grating the onion, make sure you’re not adding the extra liquid/water that comes out when you chop the onion. You don’t want to add all that extra moisture to the meat mixture. Use a paper towel to pat the onion down or use your hands to squeeze out any excess moisture.     • If you want, you can prepare the special sauce a day in advance and leave it in the fridge until ready to use. I like to make the special sauce in the morning and then also slice the tomatoes, lettuce and onion. I keep everything in the fridge, covered in airtight containers, until dinner that night.
    • I make the ground beef patty mix just before I need it. I think it tastes better that way. But I don’t see any reason why you couldn’t make it a few hours in advance and refrigerate it until dinner.
  • How to store leftovers
    • Store leftover patties in an airtight container in the refrigerator for up to 3 days.
    • I do not recommend storing assembled burgers in the refrigerator. Rather, keep all leftovers separate, like toppings, sauce, and burger patties.

Special Sauce “Spread”

  • In a large bowl, add the ground beef, grated onion, egg white, Worcestershire sauce, salt, and black pepper. Mix with a fork, wooden spoon or with clean hands until the mixture is smooth. *To make it easier, I like to take my hands and crumble the ground beef into the bowl and then add the ingredients. This makes it easier to mix them.
  • Form the mixture into 7 thin meatballs. This is a copycat recipe and the meatballs need to be very thin.*I like to use a burger press for this.
  • Grill the meatballs or cook them in a skillet (preferably on the grill) until they are no longer pink inside and to a temperature of 160°F. It takes about 4-5 minutes per side.*If you want to toast the sandwiches, throw them on the grill while the burgers are cooking.
  • Place a slice of American cheese on top of each patty and let it melt for about 30 seconds.
  • Spread the secret sauce on each inner bun and place the grilled meatballs on the bottom bun. Garnish with lettuce, tomato, and thinly sliced ​​onion.
