  • 1 tablespoon olive oil
  • 2 tablespoons red onion, minced
  • 3 cups broccoli, coarsely chopped
  • 6 eggs
  • 1/2 teaspoon salt, adjust to taste
  • 1/4 teaspoon ground black pepper, adjust to taste
  • 1/4 cup heavy whipping cream
  • 1 cup half and half
  • 1 cup of cheddar cheese
  • Preheat oven to 375℉ and spray a cake or pie pan with a drizzle of olive oil, then set aside.

  • In a large skillet, melt the butter and brown the onion until soft, then add the broccoli and cook for a couple of minutes until tender.

  • Remove from heat and pour into pan, taking care to create an even layer. Set aside to cool.
  • In a large bowl, beat the eggs with the salt and black pepper until well blended.

  • Pour in the cream and half and half and beat until well blended, then add the cheese and mix until well blended.

  • Pour the egg mixture over the broccoli in the skillet. Bake in the center of the oven for 35-40 minutes.

  • After 35 minutes, insert a toothpick or knife into the center of the quiche to check for doneness. When cooked, the eggs should be firm and the tops should be golden brown. IMPORTANT: If you don’t want the top of the quiche to darken, you need to lightly cover it with aluminum foil once the eggs are almost solid, after about 25 minutes of cooking.
  • When cooked, remove from oven and let cool for a few minutes before serving.
