Healthy and sugar free lemon cake

Healthy Sugar Free Lemon Cake – Healthy nutrition can be maintained with our healthy lemon cake recipe. Of course, moderation is key, but a piece of cake with a friend or the kids is a fun activity and a great alternative to cookies. Lemon becomes alkaline in the system and helps in the digestion process. Lemons are rich in vitamin C which strengthens the immune system and helps fight skin damage caused by the sun and pollution. Lemons should be stored at room temperature out of direct sunlight.


½-1 cup low-fat Greek yogurt

2 cups whole wheat flour (sifted)

2 eggs (room temperature)

1 tablespoon and a half of lemon zest

2-3 tablespoons lemon juice

¾ teaspoon baking soda

¾ teaspoon baking powder

¼ teaspoon salt

1 or 2 tablespoons of skim milk

1 – 2 tablespoons of sunflower oil

1 tablespoon vanilla extract

2/3 cup natural sweetener, such as Splenda or canderel

Optional – 2 tablespoons of poppy seeds

Add a little water if the mixture is too dry.


Preheat oven to 350 degrees Fahrenheit and lightly coat a baking sheet with nonstick spray.

Whisk together flour, poppy seeds if using, lemon zest, baking powder, baking soda, and salt.

In a separate bowl, whisk together the eggs, oil, and vanilla extract.

Add the sweetener, yogurt and lemon juice until the mixture is well integrated.

Add the flour, etc. in the bowl with the egg mixture and mix all the ingredients.

Add the milk little by little, always stirring.

Pour the mixture into a loaf pan (lined if possible) and cook for 30-40 minutes. Check with the broiler after 30 minutes.

Remove from oven and pour in a splash if using.

For the drizzle, mix together 2 teaspoons of canderel, a teaspoon of milk, and 2-3 tablespoons of lemon juice. (Change as desired).

Cool on a rack and serve.
