This Lady Pasta Salad lunch was repeated at our house. It’s super easy to make and tastes great! Tender pasta and crispy vegetables seasoned with Italian sauce. The recipe is from my trusty government school canteen cookbook. I am so happy I decided to try it. It is surprisingly delicious. One bite and you’ll agree!

How to Make Lunch Lady Pasta Salad

This side dish is so easy to make with just a few simple ingredients. Bring a large pot of water to a boil over medium-high heat. Cook pasta al dente according to package directions. Drain the pasta. In a large bowl, combine cooked pasta, frozen mixed greens, chopped broccoli, salt, and pepper. Pour Italian salad dressing over noodles and vegetables. Toss lightly to combine and evenly coat. Refrigerate pasta salad until ready to serve. Toss pasta before serving and garnish with fresh parsley or basil if desired.

  • 12 ounces rotini pasta
  • 1 pound frozen mixed vegetables, thawed
  • 12 ounces chopped broccoli
  • 1½ cup Italian salad dressing
  • Salt and pepper to taste
