Ingredients for the feta cheese marinade

  • extra virgin olive oil – Create the base of the marinade. Try to take some good quality extra virgin olive oil, just because it makes up most of the marinade.
  • red wine vinegar – Adds a delicate background flavor and mint the shallot very slightly. Red wine vinegar is a classic addition to Greek salads (which contain feta cheese), so it works perfectly here.
  • shallot – Cut very fine. It won’t take long, but it adds a nice touch of flavor and some texture too.

Spreading the feta cheese on a flat plate gives you everything equal amount of marinade. There’s also no need to throw out the feta cheese and you risk it collapsing. You can just baste it without having to move it.

Serve the marinated feta cheese

I recommend bringing the feta to room temperature before serving, just to loosen up the marinade again.

a) Feta – Try to get good quality Greek feta cheese. It usually comes in a pickle-coated package. It’s important to remove it or the marinade won’t coat the feta properly.
b) Storage – Seal the top well with cling film for more than a few hours. This will last 2-3 days well stored in the refrigerator.
c) development of taste – You will notice that the longer you marinate the feta cheese, the spicier it will be because it is soaked in more vinegar than oil. You can balance this out with a dash of honey if you find it necessary, but this only happens if you marinate it overnight.
d) Use – This is great as part of a cheese board or antipasto board; perfect dressed with salads, but I love it spread on toast with sliced tomato on top!
