Nashville Hot Sauce with Butter » Simple and Healthy Recipe! ✅

Recently made famous by KFC Nashville Hot Chicken, Nashville Hot Sauce it’s the sauce used in the regional dish that’s been around long before KFC sold it.

Hot sauce is more of a spicy paste or oil than a thick, grainy sauce packed with flavor.

What is Nashville hot sauce?

Nashville hot sauce is a regional hot sauce made with cayenne pepper, other spices, and brown sugar. Served on fried chicken to make Nashville hot chicken.

Have you ever been to Nashville? My husband and I love it! We stayed on Lower Broadway and hopped from bar to bar listening to the amazing live music all day.

Throw in some good southern iced tea, moonshine, barbecue, and hot Nashville chicken and you’ve got yourself a good weekend.

In fact, it’s been almost a year since we’ve been there, which means we have to go on a trip. But since we have two little ones out there, I’ll have to settle for making myself a meal that reminds me of Nashville.

Nashville Hot Sauce can be made with a vegetable oil, butter base, or lard.

Although a vegetable oil base does not harden easily and lard is much more stable, I personally like a butter base. You can use a pinch of honey or agave nectar to stabilize the sauce. It only requires that the sauce be heated slightly before using, because the butter solidifies when cold.

Use ghee, no milk solids butter, works best. If you don’t have time to make your own batch of ghee, buy a jar of ghee from the supermarket.

Ghee is a pantry-stable ghee that does not require refrigeration. You can find it in the international aisle near the Indian food. This also means you won’t have to store it in the fridge and you won’t have to return it to room temperature every time you use it.

What kind of butter is better?

All butter sold in the United States must contain at least 80% butterfat, the foamy, white material that forms when heated.

The grades, ranging from the best grade AA to grade B, are based on flavor, body, color, and salt and water content. European butter will have more fat content and also more flavor with a darker yellow hue. Cultured butter has active cultures and will give it more flavor, like buttermilk or yogurt.

Traditional Nashville fried chicken is served on white buns with pickles. However, I wanted something a little more meaty and sweet to complement my Nashville Hot Sauce, so I opted for buttermilk biscuits.

But according to Nashville historians, Nashville Hot Chicken wasn’t born there. Although it has been around for decades, it was Prince’s Hot Chicken Shack that made it popular.

And of course KFC has now brought it to the masses. You’d be hard-pressed to find a true hot chicken eater to say that it even comes close when compared to the bed-and-breakfast deal.

Also served with pickles, I used my honey habanero pickles.

Storage and freezing

If fresh with butter, refrigerate for up to 1 month. If you use ghee or ghee, it is storage stable without refrigeration.

SHAKE WELL BETWEEN EACH USE. The ingredients will settle and need to be redistributed.

You can even freeze your own Nashville hot sauce! Simply place it in an airtight container or plastic bag with as little air as possible. Freeze for 3-4 months. Make a double batch!

Questions you may have about how to make Nashville Hot Sauce:

What makes Nashville Hot Chicken? The preparation of the chicken, which is usually a fried chicken brined with buttermilk and of course the sauce.

Many other hot sauces are simply ground chili peppers and a vinegar base, while Nashville hot sauce uses lard, oil, or butter.

The cayenne pepper stays grainy instead of a smooth shake. All other spices are the property of each restaurant or recipe. None of them are right or wrong, but rather personal preference.

Can I make it creamy? It’s not really a creamy sauce. If that’s what you’re looking for, try our horseradish sauce or one of our fabulous aioli.

Should I use clarified butter? You don’t have to and I know that step seems unnecessary, but it’s worth squeezing out all that butterfat for a liquid gold for texture and flavor.

What does Nashville Hot taste like? It is a spicy aroma of chili powder. Some are a bit sweeter and some are spicier. It depends on the recipe and all are acceptable.

What can I replace butter with? Many Nashville joints don’t use butter at all, they use vegetable or canola oil. You can use both.

What can I replace with honey? You can omit the honey or replace it with agave nectar.

  • 1/2 cup unsalted butter, preferably clarified
  • 3 tablespoons cayenne pepper, more or less to taste
  • 2 tablespoons brown sugar
  • 2 teaspoons coarse kosher salt
  • 2 teaspoons ground black pepper
  • 2 teaspoons of garlic powder
  • 1 teaspoon smoked paprika
  • 1 tablespoon honey, optional
  • Combine the butter, cayenne pepper, brown sugar, salt, pepper, garlic powder, paprika, and honey in a heavy-bottomed saucepan. Stir over low heat until combined. The mixture will not be smooth.
