Nectarine Streusel With Rosemary » Simple and Healthy Recipe! ✅

Summer is New England, and anywhere north of Sacramento, you can enjoy fresh fruit while it’s still in season. Fall is coming and there will be plenty of time for apples and pumpkins, but for now, I’m trying to squeeze in all the summer treats that are available. Baked fruit is my favorite summer dessert, whether it’s berries or peaches. I guess you could substitute peaches in this recipe if you’re not a fan of nectarines. Either way, vanilla and fresh rosemary give these nectarines a sweet, light, and pleasant summer flavor. —Austin | tea and stories

  • 3 nectarines

  • 6 tablespoons of oatmeal

  • 6 tablespoons brown sugar

  • 2 tablespoons coconut oil

  • 2 teaspoons of rosemary

  • 1 teaspoon vanilla extract

  • 1/4 teaspoon salt

  • 1/2 cup roasted cashews

  1. Preheat oven to 400°.

  2. Wash the nectarines and cut them in half. Set aside.

  3. In a food processor, place oats, brown sugar, coconut oil, rosemary, vanilla, salt, and roasted cashews. Blend until ingredients are incorporated. Don’t overdo it or you’ll get too thin a mixture.

  4. On a lightly greased baking sheet, place the nectarines and garnish with 2-3 tablespoons of the mixture. Cook for 20-25 minutes or until nectarines are tender.
