If you know me, you know me love cheesecake.

From the best vanilla cheesecake recipe to the best chocolate cheesecake and these fun Easy Cheesecake cupcakes, I love it all!

But summer is here and I’m turning more and more towards my favorite no-bake desserts.

This no-bake chocolate cheesecake is perfectly rich and creamy, yet holds up great even when sliced ​​thanks to the cold, melted chocolate in the base.

Easy to make even with milk chocolate or white chocolate if you prefer!

This Chocolate Cheesecake complements my cheesecake collection nicely, filling in the gaps between this No Bake Lemon Cheesecake, No Bake White Chocolate Cheesecake, and No Bake S’mores Cheesecake, so you have many options for summer!

And however you choose to overcome it, it will be a hindrance to the show.

Ingredients needed:

  • Melted butter: acts as a glue for the cake! I use unsalted, but salty will work too, you may want to add a tablespoon of sugar to offset the extra salt.
  • Oreo cookies: we are using the whole cookie, frosting and all.
  • ChocolateAny type of chocolate will work, just choose a solid chocolate bar, something that melts smoothly and sits firmly.
  • Cream: Here you need a heavy whipping cream, at least 30-35% fat.
  • Cream cheese: Whole cream cheese is better because it contains less water, which means a firmer cheesecake. You can use light cream cheese for a smoother cheesecake.
  • Powdered sugar: the icing sugar sweetens and thickens the cheesecake. The use of powdered sugar also means that our filling is perfectly smooth.

How to make no-bake chocolate cheesecake:

Chop Oreos with melted butter in food processor. Melt the chocolate with the cream. Beat the cream cheese until smooth. Add the melted chocolate and sugar. Add the whipped cream. Spread in the prepared pan.

Tips for making this No Bake Chocolate Cheesecake:

  • I used to add my cream to the cheesecake filling and whisk everything together. This worked great for me to be honest, but I know it can be hard to tell when you’re done assembling and it wasn’t that foolproof. If you already made the recipe this way and it worked well for you, you can continue making it. If not, try my new method! I guarantee you won’t regret it 😉
  • You have to give him time to relax.. A significant amount of time. If you’re serving it for dinner, you may want to make it in the morning so it chills all day. You can also make it the day before and let it chill for up to 24 hours. Don’t let it sit for more than 24 hours as the crust may start to get a bit soft.
  • Use a chocolate that you like to eat. If it’s dark chocolate, use dark chocolate. If it’s milk chocolate, use that. You can even go crazy and use white chocolate! The choice is yours.

  • ½ cup of melted butter
  • 300 grams of Oreo cookies with filling (1 regular package, 25 cookies)
  • 200 grams of good quality chocolate (or about 1 1/4 cups of chocolate chips)
  • 1 ½ cups cold broken whipping cream
  • 750 grams cream cheese (24 ounces or 3 packages), room temperature
  • 255 grams of powdered sugar (2 cups)
  • In a food processor, work butter and cookies until cookies are fine crumbs and mixture begins to stick together.
  • Place a piece of parchment paper between the bottom and rim of a 9” springform pan (optional, just helps remove cheesecake later).
  • Firmly press crust mixture into bottom of pan and about ½ inch up sides. Put aside.
  • In a medium bowl, combine chocolate and ½ cup cream. Microwave for 20 to 30 second intervals on full power, stirring well each time, until melted and smooth. Cool slightly.
  • In a large bowl, beat the cream cheese with an electric mixer until creamy. Add the icing sugar and melted chocolate and beat on low speed until smooth.
  • In a separate bowl, beat the cream until you get a firm cream. Combine cream cheese mixture with a spatula or electric mixer on low heat.
  • Spread over prepared dough, cover and refrigerate for at least 6 hours or overnight. Cut into slices and serve with whipped cream or to taste.

*An 8″ springform pan will work just fine; you’ll just have a taller cheesecake.
