Oatmeal Raisin Atta Cookies » Simple and Healthy Recipe! ✅

I’m not a cookie lover, but I have cravings. And always at the most crowded, strange and inopportune times. So the only thing left to do is prepare a quick batch that satisfies the palate without completely upsetting the caloric balance. Also, I’m not a fan of ultra-processed bleached white flour. So I use Atta (Indian wholemeal flour) for all my baking! A drop of butter and everything improves. The texture is definitely different from a “regular” cookie, but there’s nothing these little munchkins won’t satisfy. And I definitely ate the whole freshly baked pan once! – Shuchi

ingredients
  • 1/2 cup unsalted butter

  • 1/2 cup brown sugar (more if you like your desserts sweeter)

  • 2 tablespoons dark maple syrup

  • 1 egg

  • 1/2 teaspoon baking powder

  • 1/2 cup 1 tablespoon suitable

  • 1 1/4 cups rolled oats (not instant)

  • 1/2 cup raisins

  • 3 tablespoons coconut flakes (optional)

  • Pinch of salt

  • sprinkle the cinnamon

  • Spray the vanilla essence

Indications
  1. Heat oven to 350F.

  2. Mix flour, salt, baking soda, oatmeal, and cinnamon and set aside.

  3. Beat the butter (at room temperature) with the sugar and maple syrup until creamy.

  4. Add the egg, beat well, then add the vanilla extract.

  5. Add the flour mixture. Blend until smooth (don’t over blend) then add the raisins and coconut flakes.

  6. Use an ice cream scoop to scoop some of the mixture into a non-stick pan (leave an inch between each scoop for the cookie to spread out) and bake for 15-18 minutes or until the edges are golden brown.

  7. Cool and store in an airtight container, or just eat them all! Nope!

  8. Notes: 1. For a vegan/egg-free version, substitute a) 1 egg with 1 medium banana, mashed, added at the same time the recipe calls for the egg b) 1/2 cup butter with 1/2 cup vegan butter (such as Earth Balance) or 1/4 cup vegan butter and 1/4 cup light olive oil. The other steps remain exactly the same.

  9. 2. You can also experiment with ingredients of your choice, such as chocolate (add 1/3 cup cocoa powder to flour mixture and increase sugar by 2 tablespoons). The possibilities are endless!
