One Pot Chicken Fajita Pasta

This Overnight Chicken Fajita Pasta is a new favorite. It has all the flavors of chicken fajitas in pasta form. Cheesy chicken pasta packed with fresh vegetables and a delicious creamy sauce with a Mexican flavor. We loved all the flavors in this casserole. The best part of this recipe is that you don’t have to boil the pasta before you make it! Perfect for busy weekday afternoons. Add this to your menu ASAP!

How to make overnight chicken fajita pasta

This casserole is so easy to make with just a few simple ingredients. In a large bowl, whisk together chicken broth, milk, cream of chicken, and cream of mushroom soup. Combine cooked minced chicken, fajita seasoning, minced onions, minced bell peppers, and raw pasta. Pour the mixture into a lightly greased mold. Cover this dish with cling film or aluminum foil and refrigerate overnight.

When it’s time to cook the pasta, remove the pan from the refrigerator and uncover the pan. Preheat the oven. Sprinkle grated cheese on top of pan and cook until bubbly. Garnish baked pasta with parsley or cilantro.

Helpful tips and frequently asked questions

  • DO NOT cook the pasta before assembling the pan. Use dry pasta, right out of the box.
  • I usually chicken rotisserie you can use any cooked chicken you have on hand in this dish.
    • Boneless skinless chicken breasts, boneless skinless chicken feet, or chicken fillets work great.
    • You can replace leftover turkey.
  • you can use any combination of cream soup in this saucepan. Cream of chicken, mushrooms, or celery is fine.
  • I use a combination of green, yellow and red bell peppers. Feel free to use one type of pepper if you don’t want to spend the extra money.
  • Do I need to cook the peppers and onion before adding them to the saucepan? I did not cook the vegetables before adding them to the pasta mix. In my opinion they cook well with pasta.
    • Feel free to sauté the onions and bell peppers in a little olive oil over medium-high heat before adding them to the saucepan.
  • you can use any grated cheese that you like. I usually use cheddar cheese. A mix of Mexican cheeses is equally delicious.
  • Is chicken fajita pasta spicy? No. This is not a spicy dish. For a spicier dish, add a can of Rotel chopped tomatoes and green chillies and/or a dash of cayenne pepper to the casserole.
  • They can replaces taco seasoning for the fajita seasoning packet.
  • I usually macaroni. You can use any short pasta you have on hand. Penne, farfalle, or rigatoni are fine.
  • Trade leftovers in an airtight container in the refrigerator.

What to serve with baked chicken noodles

This cheesy pasta was a BIG hit at our house. We ate this for dinner and had leftovers for lunch during the week. This makes a lot of food. It’s great for a potluck or a crowd.

We love to serve it with our favorite Mexican Chopped Salad. This is equally delicious with some spiced black beans and crusty bread. Hmm!

  • 4 cups of chopped cooked chicken
  • 1 can (10.5 ounces) condensed chicken soup
  • 1 can (10.5 ounces) condensed cream of mushroom soup
  • 1¼ cup milk
  • 1¼ cup chicken broth
  • 1 small onion, chopped
  • 2 bell peppers, chopped
  • 1 package of fajita seasoning (1.25 ounces).
  • 8 oz elbow macaroni, raw
  • 1 cup grated cheddar cheese
  • Spray a 9×13-inch skillet with cooking spray.

  • In a large bowl, combine cooked chicken, cream of chicken, cream of mushroom soup, milk, chicken broth, onion, pepper, and fajita dressing. Add the raw pasta.

  • Pour batter mixture into prepared pan. Cover and refrigerate overnight.

  • Remove the saucepan from the refrigerator and uncover.

  • Preheat oven to 350ºF.

  • Top the pan with grated cheese.

  • Cook, uncovered, for 1 hour.
